This is a unique place – primarily a rum bar, but with a pretty extensive Caribbean-focused food menu
Along with the drinks, we tried the beef sliders, jerk chicken wings, and Jamaican beef empanada

Starting with the sliders, these were pretty great. Each was pretty small circumference-wise, but had a pretty high thickness to it. What made them especially good
was how much depth the beef patty took up – this was a very thick patty, compared to the bun. Being this thick also meant the juiciness was on point – you could feel a rich, beefy
flavor from each bite and feel very satisfied.
The toppings on these were exceptional as well. The caramelized pineapple mixed into the patty gave it a slightly sweet flavor, which really enhanced the overall tropical vibe the place
was aiming for with its theming. Other flavors were added from the cheese, pickle, onion, and jam – and while these were small, they were just incredibly good.

What I was more mixed on was the jerk chicken. This was solidly spiced with the classic curry flavor associated with the style, but the crispiness and meatiness was missing for me.
Each piece was pretty small, and there wasn’t enough meat outside the bones to really dig in. The lack of crunchiness really stood out.
The rice and vegetables that came with this had a weird, bitter taste that I did not enjoy at all.

Maybe my favorite part of this was the empanada. We got one to share – and this was really big, so large we had to just get it as leftovers mostly. But the part we tried was unreal – so flaky that it reminded me of some of the best puff pastries or croissants. The inside was like a combination of the beef patty in the slider and the jerk chicken – curry-spiced beef that was mouth-wateringly good.
This has to be one of the best empanadas I’ve had.

The price ended up being over 60 a person for what we had, which included a couple drinks each. It’s certainly expensive, but I don’t think any food items by themselves are that overpriced. What I do quibble with is the automated 20% service charge.

Overall, this is an excellently-themed bar with good drinks but exceptional food, albeit a bit expensive. 8.75/10

⭐️⭐️Rumba Seattle – Cocktails Worth the Hype, Food Falls Flat

If you’re in Seattle chasing world-class cocktails, Rumba is the spot. Their Old Fashioned was beautifully balanced, their rum flight had one memorable standout, and the vibe is a moody, eclectic dream (hello, content-worthy backdrops). Service? Warm and attentive—5 stars.

But when it comes to the food, it’s a different story. The empanadas were all crust, no flavor—thick, doughy, and missing the soulful punch Abuela would bring. The guacamole with plantain chips looked impressive but quickly disappointed: brownish, bland guac and plantain chips that swung between oversalted and under-seasoned. Zero consistency, zero freshness.

✅ Come here for the cocktails, ambiance, and Instagrammable rum collection.
❌ Skip it if you’re expecting authentic, flavorful Caribbean food.

Influencer Verdict: Seattle’s rum lovers will be in heaven, but foodies looking for bold flavor should keep searching.

A must visit! I recommend making reservations ahead of time, you will not be disappointed. I love a good cocktail and this place did not disappoint. Presentation, quality, and taste are top-tier here and staff are very accommodating and amazing. Great spot for a special occasion or romantic first date. I will definitely be coming back soon!

Drinks were spectacular! It’s a tiki bar so I expected lots of over sweet (and priced) drinks, but I have never been happier to be wrong. Every drink was well-balanced. Of the nine different drinks we had at the table, every one was a winner!

Our server was amazing; friendly, knowledgeable, and attentive enough to be helpful but not feel like we were being rushed out the door.

Will definitely be going back!

It was nice. Nothing super memorable but food, service and vibe were great. Not too busy and we ordered a few drinks. Main reason we were there.

The best rum collection you’ll find. Excellent cocktails, outstanding service.

We are huge rum nerds and this place was like a visit to the promised land. The bartenders are incredibly knowledgeable, and can make recommendations. Let them know what you’ve tried and liked and why and they’ll set you up great. Small food menu that was good.

Great food and rum drinks. Get reservations on weekends or when there is a show at the Paramount, because it will be busy! Great atmosphere and decor. The dark wood and turquoise is relaxing and beautiful. I go here whenever I have an excuse to!
