That said, I noticed a few areas that could be improved.
First, the entrance setup. The restaurant has double doors, and due to the strong wind in Malta, cold air enters the dining area every time the door opens. Sitting near the entrance can therefore feel uncomfortable. It may be helpful to consider solutions such as better wind protection or an air curtain system to improve comfort for guests seated nearby.
Second, the sauce pricing. Charging €2 for additional sauce feels slightly overpriced. It might be more customer-friendly if sauces were included with dishes or offered complimentary in small portions. This would enhance the overall perception of value.
In terms of service flow, it would be beneficial if waiters checked on the table shortly after the food was served—perhaps within one or two minutes—to ensure everything is satisfactory. For example, we wanted to order extra rice but had to wait a while before someone came to the table. A quicker follow-up would improve efficiency and guest satisfaction.
Regarding the aperitif service, we were initially offered drinks without being given the menu first. While upselling is understandable, it may feel slightly too direct. A more subtle approach—such as highlighting a “special aperitif of the month” on the table or promoting it visually—could feel more inviting and less obligatory.
Finally, in terms of pricing, we paid €56 for two people (without dessert and only water). For Malta standards, this feels slightly on the higher side. A small adjustment—perhaps 10–15% lower—could make the restaurant more competitive and attract more returning guests.
Overall, Ruby Ray offers good food, generous portions, and a nice interior. With a few improvements in comfort, pricing structure, and service timing, it could provide an even better dining experience.
The staff were incredible. They were warm, attentive, and genuinely made the night feel special. Every request was accommodated with a smile, and nothing felt like too much trouble. Their service really elevated the whole experience.
And the food… absolutely delicious. Every dish was beautifully presented and full of flavour. You can really tell how much care goes into the menu.
