Yummo! My husband had a margarita which was unfortunately a little light on the alcohol, but his three-way combo with 2 beef & chicken enchiladas & a beef taco was really good. My Surf & Turf Fajita was one of the best fajitas I’ve ever had! Whatever they marinate their steak in is so good, the beef was tender and the shrimp was grilled perfectly along with the peppers & onions. Nice presentation with the refried beans, guacamole,
sour cream, rice, lettuce & tomatoes on the side. They also brought chips and salsa to start, and their homemade salsa with cilantro was yummy! Our server was excellent, very friendly, the food came out fast and hot. We would definitely go back here again! (But, they do put much more alcohol in our margaritas up North at Casa Tequila in Seabrook, New Hampshire!)

Then came Gina, our server, who was nothing short of amazing. Attentive without hovering, she anticipated our every need—from recommending the perfect margarita flight to sharing insider tips on the menu’s hidden gems. Her energy was infectious, turning a simple dinner into a lively conversation, and she made us feel like VIPs from the moment we sat down.
Shoutout to the food runner, too—they zipped around with the kind of quiet efficiency that keeps everything flowing smoothly, ensuring our plates arrived hot and our glasses never lingered empty. It’s those little touches that elevate a meal from good to unforgettable.
And oh, the food and drinks? Generous doesn’t even begin to cover it. Multiple areas at different levels, a couple steps up in different areas. They have ramps also, so it is all accessible even though it doesn’t look like it. Good size resturant and deeper in is a large bar and small stage. It was Tuesday night, and they had karaoke.
Service was reasonably fast, and it has a good size menu and a separate drink menu, along with a daily specials menu.
Food came out hot…one dish was truly sizzling. It’s surprisingly good. The restaurant is a bit of a drive for us but could see going back if in area.

I hadn’t been to Rosalitas in over a year because the last few dining experiences there were awful. The food was hugely disappointing. However, my boyfriend and I decided to go there last night for dinner. We were pleasantly surprised! We had a lovely waitress but she was exhausted from working many hours the past few days. She brought us chips and salsa that were EXCELLENT! Chips in the past were thick and overly salty. These were light, crisp, and salted perfectly. The salsa was also fantastic! The waitress brought us a small cup of the “spicy” green salsa, but we didn’t find it spicy at all. I ordered the combo fajitas. I must say I was shocked to find 4 small pieces of steak and 5 very small pieces of chicken on my plate. There was a lot of green peppers and sauteed tomates on the plate but they lacked seasonings. The steak was perfectly seasoned, I must say. The accompanying sides- guacamole, sour cream, pico de gallo, and refried beans were good. My boyfriend had a chicken taco and the Mexican pizza. He enjoyed them both. We will be returning!

Why have I never tried this place before? I’ve lived here most of my life and it never occurred to me to give it a shot. Well, today hubby and I had eye exams just east of 95 on Lantana Rd and we were both starving when we were heading west for home. As we approached Congress Ave, hubby suggested we try Rosalita’s as he hadn’t been there in decades and it used to be pretty good. I had never been, so I pulled in and parked as they were open.

Inside, the Hostess was, very friendly and showed us to a booth in a well lit, brightly colored, Mexican themed dining room. It was very clean, not loud and quite inviting and pleasant. Almost instantly, our server appeared with a smile on her face and in her voice. She introduced herself as Sally and took our drink orders. We looked over the menus as she got our beverages. There were so many delicious sounding things we were torn as to what to get and relayed this to Sally. She suggested something far removed, from what we we’re looking at and her suggestions sounded so good, that is what we ordered. (I waited tables for 13 years and learned that when a server, especially one that has worked at an establishment for many years, as Sally had, you listen and take their advice without fail when it’s offered. Period! So, we ordered the Meatloaf and the Pot Roast. Both came with a delicious demi glaze and chorizo mashed potatoes topped with fried shoestring onions.

As we waited for our entrees, we tore into our first basket of fresh, lightly salted chips and the most delicious salsa we’d ever eaten. We mixed a bit of the green spicy with the red mild and the combination was scrumptious. Sally brought out a second basket of chips and more salsa with our entrees. Yes, we finished them as well.

The quality of our meals went far beyond anything we were expecting and we’d be hard pressed to decide which was our favorite. Both meat dishes were seasoned beautifully and were fork tender. The potatoes were a great compliment to the meats with the slight flavor of chorizo to further heighten the complex flavors of the plate. Topping the entire offering were crisp, fried shoestring onion. This was beautifully presented on very unique triangular dinner plates. We were duly impressed with everything about this dining experience. The presentation, visual appeal and flavors were exceptional. Hubby even said what I was thinking, this is Michelin quality stuff here, and it truly was. The last time we had a meal of this quality was in February at a French restaurant in Manhattan. One big difference between these two great meals was the one in NY cost us close to $300. and this one was under $50!

Sally’s service was also just as attentive, friendly and actually more helpful than our server at the ritzy French restaurant. She’s very good at her job! If you’re fortunate enough to get her as your server, please treat her as well as she treats you. She’s sure to make your dining experience a very pleasant one.
We can’t wait to go back and try a few other items on the menu that Sally recommended. She also gave us information about events such as live music and karaoke nights which we appreciated as they sounded entertaining and fun.

Don’t do what I did and wait forever to check Rosalita’s out. It’s something better done sooner than later!

Update 6/23:
We ate here again to try some new items. Sally was once again our server and again she took excellent care of us.

This time I got the Southwest Seafood Primavera which was a very rich and creamy southwest Alfredo sauce, full of scallops, shrimp, broccoli florets, and Jillian carrots over a bed of fine fettuccine topped with shredded Parmesan cheese. On the side of the plate was a warm, dressed bread stick. It was delicious and very filling. Definitely something to order again.
Hubby got the Southwest Cobb Salad. It was a BIG salad containing greens, blue cheese, mango/pineapple salsa, chicken, hard boiled egg, purple onion, avocado and bacon with blue cheese Dressing on the side. It looked amazing and he confirmed that it was.

Worst ever. Margarita served in hot glass right out of the dishwasher.
Salsa tasted like chopped tomatoes – no flavor.
Queso was, I’m not kidding, velveta! NASTY!
Entrees sucked too!
Place needs a deep clean! Carpets dirty and bathroom doors need cleaning/painting.
Dont have a disappointing experience – too many other choices.
Waitress forgot our second margarita, so we cancelled it.

We visited Rosalita’s Tex-Mex on a Tuesday evening and loved that it happened to be karaoke night—such a fun and lively atmosphere. The food was great, but what really stood out was our waitress, Sally. Coincidentally, she had lived in Texas and absolutely knew how to take care of a Texas family craving good Tex-Mex.

Sally was hilarious, warm, and incredibly attentive—she had us laughing the entire night and truly made the experience memorable. Between the welcoming vibe, great service, and fun energy, this will definitely be our go-to Mexican spot in Palm Beach County. Highly recommend!

And one other thing, Sally, you are correct, those are NOT Texas Sopapillas

I’ve ordered from here twice…the first time they forgot my side with the heuvos rancheros and charged me $8 for a cup of soup they filled 1/3 of the way. The second time I ordered they gave me one egg in it and gave me a much smaller bag of chips and salsa? I don’t understand what they’re doing over there. But I will say the food is good. You just never know what you’re getting.
