Root Down is grounded in story and character. As a vision from diverse backgrounds, the riff behind the name pays homage to the late and great Jimmy Smith, a legendary 1960’s jazz musician. His live song and album, recorded in 1972 entitled Root Down (And Get It) speaks to the ability of returning to the root or “one” chord of the song. Melodic, raw, vital, earthy. The Beastie Boys, taking their own spin on the tune made it funky, gritty and fresh in the album Ill Communication. Mirroring the song’s history, Root Down’s philosophy echoes these cords. 10/10 would recommend!! Especially if you want a meal that makes you briefly forget you’re about to sit in a metal tube for several hours.
The staff were fantastic from the start, friendly, knowledgeable, and genuinely confident about celiac safety and cross contamination. They made ordering easy and stress free, which is priceless in an airport setting.
The food was outstanding. The avocado key lime pie was next level. It did not feel like airport food at all, more like a destination restaurant that just happens to be in a terminal.
Between the celiac friendly menu, amazing service, and food that actually excites you, Root Down sets the bar for airport dining. If you are passing through Denver, do yourself a favor and stop here. It turns travel days into something to look forward to.
The atmosphere is so chill. Music was a vibe and they had some vintage decoration throughout the dining area. The staff were all very pleasant and seemed to enjoy working with one another.
I was able to enjoy the Pozole soup, Farro Salad and Sweet plantains. Each one was gluten free and vegetarian friendly. The soup was a bit spicy, but really good and hearty. I’ve never had avocado or radishes in a soup but it worked! The salad had a miso paste that lined the plate and brought a richness and fullness to every bite. The dressing had a smooth umami flavor and the fresh almonds gave the dish a crunch.
The sweet plantains Forget about it! They were cooked to perfection, tender, moist, and crispy on the outside. I wanted to take some to go but I knew that I wouldn’t be able to make it on the plane without dropping them. lol
The only thing I didn’t like about the restaurant was that I had to leave. Lol. & I wish I could have eaten more but Denver doesn’t allow you to smash like you want. The elevation curbs your appetite. (Boo!)
Other than that, this is a 10/10 recommend!
Service is perfectly paced. They’re quick and efficient if you’re short on time, but if you’ve got a longer layover, you never feel rushed or pushed out. It’s a rare balance to find in an airport.
Plenty of comfortable table seating, a nice bar setup, and an atmosphere that feels way more relaxed than most airport spots. This is one of those places that actually makes a layover better instead of just tolerable.
