I asked to add the ingredients listed on the menu like crisp pancetta, roasted garlic, and the fresh scallions. He went in the kitchen and returned about 5 minutes later with a small dish containing fried ham and garlic. See picture. I didn’t have the courage to say anything else about the solution or dish.
I did not eat any of what was served.
The dish was removed from the bill.
The kitchen manager came to apologize and provided an explanation of short staff and the regular cook is not working, instead the salad person made the dish.
It appears to be okay for this restaurant and Marriott to serve and have their guests pay for:
1. Substandard food prep with the same cost if it had to be paid.
2. Serve and substitute ham instead of crispy pancetta listed as an ingredient in their menu.
Why would ham instead of pancetta solve the problem they created?
For the dish to work, the ingredients have to be incorporated and mixed in the kitchen.
Why burden the customer?
And for a carbonara sauce, it is very doubtful that eggs were used to make the alfredo sauce. Okay, it may be their own version of carbonara, but it’s still a fail, because the ingredients they list were missing.
3. Having the salad prep person make such a semi-complicated dish is not helpful to the guest who ultimately pays for the substandard product.
4. The manager and staff’s actions and Marriot’s choice unfortunately get these substandard reviews.
5. It would be best to offer a reduced item menu that can be prepared by whoever is in the kitchen rather than offending or irritating guests and worse collecting the full amount on a substandard dish.
6. Staff shortage is no excuse for poor food preparation because the price charged remains the same.
7. The concept is simple, provide what is advertised and be paid for a standard meal and service.
Stopped in for something to eat.
The Cheesesteak & Fries were very good.
