If you’re strolling down Mill Avenue in Tempe, make Proof Bread at 699 S Mill Ave your stop—it’s one of my favorite spots for genuine artisan baking around here. This family-run place brings real sourdough expertise to downtown, and it’s a solid vibe in the neighborhood.
The ham and cheese croissant is a real standout: super flaky with that buttery crisp exterior, opening up to a tender, tangy sourdough inside from their slow fermentation process. It’s loaded with savory ham and gooey, quality cheese—perfect balance for breakfast, a snack, or whatever.
My visit was made even better by Aiden, who was exceptional at curating and recommending breads to match customers’ tastes. He really listened, suggested options based on what I like, and shared some great insights on the different loaves—made it feel personalized and easy, especially when deciding among all the options.
Beyond that, their sourdough loaves are fantastic—crusty and full of flavor—plus other treats like morning buns and pain au chocolat. They do wood-fired pizzas in the afternoons, and the local coffee pours are spot-on. The atmosphere is bright and laid-back, great for quick grabs or chilling.
Proof is committed to quality ingredients and sustainable ways, and you can tell. I highly recommend checking it out, especially for the ham and cheese croissant and some guidance from Aiden. Solid experience all around.
It would be great if there were a restroom or at least some hand sanitizer available, as it would make it even more comfortable to sit down and fully enjoy the delicious pastries and coffee.
Overall, a wonderful place and definitely worth stopping by.
Their croissants do not disappoint! Especially the butter and almond. The Pain au chocolat is amazing when it’s fresh out of the oven, but did not meet my expectations when it was cold.
Their coffees are really great, some of the best ones I’ve had around campus, and I’ve been to a couple of them. This is for sure my regular coffee spot now!
