Get there early. Lines before open are very long. It reminds you of Universal Studios lines. But goes fast and you dont need an express pass to stand there. Dress weather accordingly. The line wait is worth the wait! They roll fast! The food is to die for. Every single item was amazing! From the Berliner, to the laminated lemon raspberry croissant, the open pastry with chicken salad and jalapeños. We spent 43 for 6 items but 1000% worth it! Run here dont walk. Hands down recommend everything and we will be back again! Locals please frequent this place keep them in business! Parker, CO believe we drove 25 to 28 mins from Aurora. I bet later I find out I was not in Parker haha. Hands down best bakery out of the 7 I have been to past 3 years visiting here!

The croissant took me back to Paris, so buttery and flaky. I read the reviews before I came, so I came about 15 minutes before opening and there was already a line. The line went quick and the service was great. Some reviews say it’s expensive, but I think the prices were great for the high quality of the pastries. We loved everything we tried! The heart entremet was divine, perfectly fluffy mousse!

Poulette. A name I’ve heard for a very long time living here in Colorado but never stopped by because it’s pretty far down south and I’m not the biggest sweets guy. Well, the pastries and sweets here may have changed my mind and I’m glad I found myself down south for an appointment and remembered about Poulette. The woman behind me said it best when we asked what she recommends and replied “it would be quicker for me to tell you what isn’t good here”.

She was right. Everything we got here was really good and clearly expertly made. The best part? Nothing was overly sweet. We visited around 9AM on a Wednesday and there was plenty of selection at the time with not much of a line. I did hear that on the weekend that it gets very busy and their best items sell out quickly. Call me basic, but I really liked the Snickerdoodle cookie. The savory items were not as good as the sweets but still very good!

The prices here are definitely on the expensive side but just have some self control, unlike us, and get a reasonable amount of things and you should be fine. Check out my picture of the menu for an idea of current prices.

The first time I made it in, I barely missed closing and met with the nicest lady. Since it was my first time, she proceeded to throw in a few freebies to introduce to their assortment. She was so kind in educating me about their individual products in detail. It was such a small but thoughtful that absolutely made my day. My mom was battling stage 4 cancer at the time (RIP), and I really appreciated the pick me up. They are rated one of the best bakeshops in the US and you can absolutely tell by the quality. Yet, they maintain the friendly charm of a local small town location. The founders of the shop trained under some of the best pastry chefs in the world and have mastered the art of combining technical skill with adding unique modern flavors. Our family favorite is the humble Pain au Chocolat, but I was absolutely enamored by the fantastic flavors of the specialty stuffed croissants as well. Their macaron was the best I have had I am generally impartial to macarons. The biggest surprise was their perfectly balanced coffee flavored cream which accompanied their mini beignets.

Amazing how a FB post about pastry sent us on an adventure through our tastebuds. Surprised hubby with this treat bonanza today. From the moment we arrived and saw the line – we knew we were in for a treat. Phenomenal options, sweet and savory, decadent and delicious. We took our choices home and shared them. The homer’esque smile and the joy expressed by my man was worth the minimal wait time. We are definitely going to return sooner than later.

Poulette offers a delightful selection of French-style bakery items, though a bit on the pricey side. I tried a piece of chocolate croissant and a cream-filled pastry both were absolutely delicious, with rich flavors and a perfectly balanced sweetness.

Unfortunately, I was in a hurry, and there was a 10min wait time so I couldn’t sit down to enjoy their coffee and they only had one option for coffee, but the display of exquisite baked goods was impressive. It’s no surprise they had plenty of customers. The only downside was the prices which may do not justify. I paid like 33$ for both items.
Overall, a lovely spot for high-quality treats. Good for onetime visit.

There’s a line but it moves fairly quickly and is so incredibly worth the wait. The pastries are stunning, thoughtful, and absolutely delicious. You can’t go wrong with anything they have and the service was top tier. The person who helped us even threw in a treat since it was our first visit and we had a hard time deciding between everything.

Worth the hype! I’ve been wanting to go here ever since I heard that a bakery from CO made the New York Times. Finally got around to it this weekend and was in pastry heaven. By the time we got there (12:30ish) they said they had already sold out of a lot of their offerings but there was still so much to choose from. We picked the pumpkin macaron, buttermilk glazed donut and the berry tart. They threw in a complimentary parfait which was amaaaazzing. It was hard to pick a favorite because everything was so tasty – and fresh! The parfait was top of the list for sure, we each wished we had gotten our own! Staff was incredible and took the time to walk us through their selections, never felt rushed. Will definitely be back.

Wow! The stuffed croissant (calamansi curd with meringue, just amazing) and XL macarons (black currant mmmmm, pistachio also excellent) were insane. I’ve had gourmet macarons in Paris, and these were better. I also really liked the butter croissant and the coffee creme, and the people working there seemed happy to be there. The apple fritter was mid though, barely any apples in it, but it smelled like autumn. Overall very impressed and worth the splurge

Sunday, 10/12/2025: Stopped by to check them out for the first time and, WOW! Service was great and their croissants are amazing! Ordered a ham and cheese and a regular and both were flaky, fresh, and delicious! Also got their chocolate chip cookie and they kindly gifted me a snickerdoodle to try out!

HIGHLY RECOMMENDED!!!
