Overall, it was a good experience, but there are definitely a couple of things that could be improved.
Upon entering, the atmosphere is exactly what you want from a casual pho spot: bustling, energetic, and filled with the aromatic scent of star anise and basil. It’s busy, but the turnover is fast, so you rarely wait long for a table.
As a vegetarian, I often worry that “vegetable soup” just means boiled water with some bok choy thrown in. That is not the case here. I navigated straight to the “L” section of the menu, which is their dedicated vegetarian list.
I started the meal with the Gỏi Cuốn Chay (Vegetarian Summer Rolls). They were tight, fresh, and not falling apart. The tofu inside was firm, and the dipping sauce provided that necessary peanut-hoisin richness to contrast the fresh herbs.
For the main course, there is often a confusion for newcomers between the different formats, so let me clarify the two stars of the menu.
First, I tried the L5. Phở Chay (Vegetarian Pho). This is the rice noodle soup. The broth is the hero here—it’s clear, light, but surprisingly savory. It doesn’t taste like an afterthought. It comes loaded with broccoli, carrots, tofu, and other veggies. When you add the fresh bean sprouts, lime, and jalapeños from the garnish plate, it hits that perfect comfort-food note, especially on a cold New Jersey day.
However, the real surprise for me was the L2. Bánh Mì Tàu Hũ (Tofu Bánh Mì). If you aren’t familiar, this is not a noodle dish; it is a sandwich served on a traditional French baguette. The bread at Pho Today is excellent—crispy and flaky on the outside, but airy and soft on the inside. It was stuffed with savory tofu, cucumber, cilantro, and pickled carrots and daikon. The pickled vegetables cut through the savory tofu perfectly, and the “butter” (Vietnamese mayo) tied it all together. It is a textural masterpiece and a great option if you aren’t in the mood for soup.
The service deserves a mention as well. It is incredibly efficient. The staff moves with a purpose, and food hits the table within minutes of ordering. While it’s not a place for a long, romantic candlelight dinner, it is the perfect spot for a satisfying, high quality lunch or dinner.
Overall, Pho Today in Plainsboro has earned its reputation. Whether you are craving the warmth of the L5 noodle soup or the crunch of the L2 baguette, vegetarians can eat here with confidence. Highly recommended.
On August 12th, I ordered takeout from Pho Today. While eating my meal at home, I was shocked to discover a plastic water bottle cap mixed in with the rice after I had already consumed about three-quarters of the dish.
I immediately called the restaurant, and the lady who answered was very apologetic. After I explained the situation, she took down my order information and assured me I would receive a refund for the affected meal. I appreciated her professional response and was willing to consider it an honest mistake.
However, it is now August 25th, and after checking my credit card activity, the promised refund has not been processed.
I was not planning on writing a review because I understand mistakes can happen in a busy kitchen. But since the restaurant did not follow through on their promise to issue a refund, I am now concerned that the initial food safety issue was not taken seriously. I am disappointed by the lack of action.

Bún Bò Huē: good, except for that one type of meat that had smelled/tasted slightly off. Would not order again probably. It can be slightly too spicy for average american spice tolerance level
The menu is more or less extensive, featuring three main sections:
1) Pho rice noodles
2) Bành Mì (Vietnamese hoagies)
3) Rice plates
There are also appetizers offered, but we are not sure it’s the right choice due to really big portions served with your choice of either pho or rice plates.

The food preparation is good; particularly our pho choices – light, freshly tasting, and satisfying.
Some vegetarian options are also available.
The prices are very forgiving and budget-friendly.
The interior is clean, and the seating is comfortable.
A tip for diners: if you are to order the short rib pho, please be advised that two plates will be served, with one separate plate loaded with a gigantic bone with lots of gristle on it. That’s in addition to a big bone inside your pho bowl.
