Another local gem – The Noodle Bistro!
Bangers, bangers — I’m on a roll with these amazing local spots, and once again, this one shined through.
Let’s start with the pork: beautiful, tender strips, lightly seasoned and melt-in-your-mouth perfection. And the broth? OMG — what a gorgeous combo of fish sauce and Vietnamese spices. Pure flavor heaven.
The veggies were crisp, fresh, and had that perfect crunch that just elevated the broth even more. Now let’s talk about the noodles — silky, heavenly strands that soaked up all that delicious broth and curled up on my chopsticks like they wanted to be devoured.
I threw in one little chili for that extra kick, and it was just what the bowl needed.
Also ordered the fried spring rolls — not too greasy, with a nicely seasoned pork filling that paired perfectly with the dipping sauce.
And shout out to our beautiful, wonderful server — she was an absolute gem and made the whole experience even better.
This place is a five-star winner all day, every day. Thank you so much for the incredible meal and amazing service!

Unfortunately I did not enjoy this place. I have been here twice just to be sure. I absolutely love ramen, but the ramen here had no flavour and the meat in it was not good. The soup base was very watery. Tonkotsu is not supposed to be like this. It tasted old, too. The fried chicken was greasy and had very little meat, the flavour was essentially just oil. I will say however the squid balls were pretty tasty. The service wasn’t very friendly, not sure if the lady was having a bad day so I won’t comment on it because we all go through things and she wasn’t outwardly rude. The restaurant itself is quaint and reminds me very clearly of the restaurant that was there before (schnitzel house). Overall not a great experience either time. If you are looking for ramen specifically, try NAKA in Peterborough (open at 5pm) or Tora Sushi in Peterborough.

Ordered the veggie vermicelli, and there wasn’t many veggies? Mainly just bean sprouts and greens and I counted 4 pieces of tofu. I asked for some peanut sauce to give it some flavour and it was honestly the worst peanut sauce I’ve ever had, partly like vinegar and had the consistency of wafer. They could serve it with some sort of sauce to give it some flavour. Takeout staff wasn’t overly friendly either. The spring rolls were good though.

Excellent ramen, equivalent to ones we’ve tried in Japan. As per the owner, the restaurant uses actual pork bone to make the stew.
The spring rolls were hot and fresh. We were all pretty full by the end.
The staff were friendly and helpful in helping with accommodations like peanut allergy.

I visited Noodles Bistro in mid-June while biking the Uxbridge to Lindsay Rail Trail and tried their grilled AA beef vermicelli. Not only was it affordable at $14, the service was fast and friendly, while the dish was excellent! No ride along the Uxbridge to Lindsay Rail Trail can be complete without a stop at Noodles Bistro! 🙂

I have eaten here quite a few times over the last few years. I have also had Chinese, Vietnamese, Thai, Japanese and Korean food at some of the best restaurants in Toronto and abroad. Not sure what other customers are complaining about but my food was always spot on. From presentation, to flavour, to ingredients and everything else in between. Their Ramen dishes are great, Takoyaki is Octopus not squid, one negative reviewer doesn’t even know what they ate. The fried chicken was also exceptional among other items on the menu. Every time I’m in the area I will stop here for food, no questions asked. Thank you for providing authentic food in the area.

It’s alright for being the only ramen and pho restaurant in Lindsay. We’ve ordered takeout here often. Food has always been good – not great. Service is also good. But the atmosphere really needs an upgrade. Also, the one bald headed Vietnamese girl – Jasmine – always wearing a toque and a surgical mask, really needs to cheer up or be more friendly with customers. She’s always so cold and never smiles or talks with visitors like the other staff do. If another ramen restaurant opened up in town, I would definitely stop going to Noodles Bistro because of her unfriendliness or unwillingness to be outgoing with customers.
