Cute little restaurant in town. The food is not cheap (or, to be exact, the portions are not big), but we had a really good time tasting new things and supporting local. We appreciated the creativity and flavors: you can tell that the food is made with love with locally sourced ingredients and some imagination. We tried their spicy margarita, paloma, tlayuda, plum tacos, sweet chilli tacos, rabbit rangoon. The food has a lot of sweet flavors (I think it’s their specialty because it’s true about every dish we tried), and there are homemade hot sauces on each table that we used generously. I wouldn’t really call it a Mexican food restaurant: it’s a local funky twist inspired by. For someone just trying to escape the busy life, this was perfect. I was in town for the Universal Dance for Peace down at the Sage View Ranch and decided to sample some Mexican close by. I’m so glad I did!!!
I went with a 2 taco platter, 1 beef chimichurri and 1 carnitas (bubblegum plum sauce?) the black beans (really tasty) and a zesty slaw. Both meats were delicious and complex in their flavor. I inhaled the beef too quickly to take a photo
Chips and salsa and the aguas frescas started out the tasty meal.
The meal was a little pricey, but after eating everything, I totally think it’s worth it☺️

Dined with some local friends for dinner. This place has such a cute atmosphere. Wish i had more pictures on the interior. The walls were bright. Each table has a vase of real flowers. The special Tlayuda Nido was delicious. There was so much texture and flavor with each bite and it’s gluten free. They also have very tasty tacos. The beef taco has some spice to it. And the chicken taco was also delicious, very flavorful; offered with wheat or corn tortillas. And i was told they they source locally and create their menus around that. The rice and beans were dry. Not sure if that’s the usual or just our experience that night. Sam took great care of us during our visit.

The best way I can describe this place is “hipster overcomplication executed perfectly”. Being a California native I’ve seen alot of menus like this one and the food always fails to satisfy because all the efforr went into “being different”, but the food here was so good I cleaned my plate and came back the very next night to get carnitas grit cakes again.
The restaurant itself is a little cramped, definitely due for a size up for how good the food is, and the menus could be updated to something a bit more professional because the food is also visually so appealing it deserves to be depicted on the menu.
All in all, great food thats worth the price and trusting the over the top “quirky” menu

Fresh, local offerings made with SO much love and care; totally unusual flavor combinations and recipes that literally light up every corner of your taste buds…

Each menu item: a vibe, a journey – with a little something for everyone (salty? Check. Sweet? Check. Bubblegum plum carnitas?! You gotta try them).

All this – AND the GREATEST MARGARITA ON THE WESTERN SLOPE (maybe in all of COLORADO?).

Nido is casual, eclectic, five star dining in a no-traffic light town.

Wow! Colorful fresh delicious inventive and incredibly tasty new-school Mexican. Everything made fresh in house. Blew my top! Mezcal Paloma carnitas Oaxacan chicken tacos everything outstanding!!! We went back for cherry pie the following night. Lovely, friendly local atmosphere both indoors and out. Worth stopping into Paonia for Nido alone!

My partner said Nido has the “Best tacos she’s ever had!”

I would give Chef Ed’s food 10 stars if I could. Such incredible food & drinks here, always. Paonia is so very lucky to have such quality, fresh, creative dishes, and the friendly and festive environment is the cherry on top!
