My husband and I frequent the one in downtown Bethlehem and this location is just as good – if not even better! We ate at the Easton location Monday night and both had enchiladas, which were absolutely delicious and fresh! Lots of chicken, delicious sauce and fresh lettuce made this truly amazing! A gentleman eating at a different table had a massive burrito, which was on special that night. It looked awesome, too! Can’t wait to return and highly recommend!

Finally found an Authentic Mexican Restaurant to go to!! Mexico Lindo in Easton was spot on! With your dine in order they gave homemade tortilla chips with all homemade salsas, and a free side of guac! Clean Silverware, Clean cups, refills without having to ask, they were very attentive. My woman got Bistec en Salsa verde, which was incredible, the meat was perfect! Trust me, my woman is picky , and she ate it all!! lol I ordered the Flautas from their vegan menu and it was perfect! To complete the meal, we ordered the Churros which turned out to be homemade!! You have to check this spot out!! 10/10

Most excellent food! The chicken mole enchiladas are stellar. Chips and two salsas are homemade goodness. José was kind and efficient. Everything we ordered was delicious, and we are very lucky to now have good mexican food on the hill.

Muy recommendado! Very recommendable! Food was delicious, and tasted very fresh and homey. We loved the complimentary chips and salsa! Pictured we have the birria tacos and chicken flautas, we also got a shrimp taco! Everything so tasty. Will be coming back

I have been going to the location in Bethlehem ever since it opened. The food at the Easton location is equally as delicious. There are different specials every day. The prices are reasonable. The food is delicious. The portions are generous. My personal favorites are the steak nachos, the shrimp tacos, and the fajitas. The burritos are delicious and huge. When I lived in the area I used to go to the Bethlehem location to eat almost weekly. Now that I’m out of the area I try to eat it either of the two locations whenever I’m back to the Lehigh Valley.

The moment I realized Mexico Lindo had opened up a spot in Easton, I was already camped at the door like people waiting for a PS6 release. I wasn’t walking in for tacos — I was walking in for destiny.

Now let’s talk birria. Listen… I don’t know if the beef has been marinating since the Mayan calendar, or if the chef whispered ancient spice incantations over it, but every bite tastes like it’s been blessed by 20 years of flavor-building sorcery. You don’t just eat it — it attacks your taste buds in the best possible way. A little heat, a little tang, a little “what did I just do to deserve this blessing?”

This is not food. This is a Lehigh Valley pilgrimage site. If you’re searching for birria that slaps so hard it rewrites your life choices, stop Googling — Mexico Lindo is the spot.

By the time I finished, I wanted to stand up in the middle of the restaurant, hold my taco to the sky like Simba, and scream: “THE FLAVOR IS HERE.”
