Ok. I’m broke after going here but it may have been worth it. I’m not a huge sushi guy but it was delictable. Also ordered the wagyu beef which was tiny and cooked on a brick, but melted in my mouth…. mmm.. so good. Great location.

Solid, fresh, and elegant dishes with attentive service. It is quite expensive but it goes with the vacation experience in Vail. The black cod was delicious and the rolls were very fresh. I especially enjoyed the mushroom dish that was cooked in a very savory sake broth.

If a place is less than 4 stars, I’m more likely to not write a review than say something negative. By and large, I believe people do work hard and try to make a positive experience. Maybe I came in on an off night or I was tired, jet-lagged, not in the mood.

Having been to few sushi places before, this was great! Great vibe when you walk in, very clean, nice hostess too! Since I don’t know much about Sushi, our waiter Antonio was very descriptive and detailed on every item in the menu we could get! I walked out knowing so much more about sushi and that type of food than ever before. I was shocked at how knowledgeable Antonio was on sushi in general, and on the restaurants menu!

Had a great experience at Matsuhisa in Vail. Service was on point and food was spectacular. We did order omakase for the table which was for a special occasion and definitely worth it, though not cheap. Nothing bad to say and would go back time and time again. The Vail Matsuhisa is by far the most beautiful of the 3 options in Colorado (Aspen, Denver and Vail). All three are great, but the other two don’t have the view that Vail has.

I was quite disappointed with the quality of the fish. I ordered five different pairs of nigiris, one was a recommended special. Therefore I expected high quality and freshness, but what arrived was disappointing. The fish wasn’t fresh and it did not taste like high quality sushi I’ve had before. They did have a decent vegan selections which were way better than the nigiris. The dessert was okay.

I feel that the quality of the food is not commensurate to its price. The sashimi was slimy and cost $15 for two pieces of very thinly sliced tuna/salmon. The rolls were meh. If this restaurant were in California, I doubt it will get any patronage. I couldn’t believe it was fully booked, definitely overrated. The black cod tasted good but I was underwhelmed by a plate with zero sides.
