Born into a family with 15 children, Jose Ramirez was lucky number 7. He started his pursuit of this dream as a 13-year-old bagboy at a grocery store in what is known as The Highlands area of Denver. He later worked as a server at Las Palmas, working 60-70 hours per week, eventually becoming the server manager. He would work so much that he would oftentimes sleep in his car while providing for his wife, Martha, and his two sons, Luis and Daniel.Jose saved up enough money to open up the first Los Dos Potrillos location in Centennial in 2002. Jose opened this first location of Los Dos with just $5.18 left in his bank account.

This place can’t get fajitas right chewy meat and not a typical skirt stake. Homemade tortillas were great. Rice is very underwhelming. Chips & salsa are good. Mexican amber was delicious. Wife loves this place but I don’t get the hype every time we come here it’s just okay.

The food is delicious but what really keeps me coming back is my waitress Angelina (Lina). She is absolutely spot on and personable. She never skips a beat. Great timing; she doesn’t hover over you and gives you, your space yet always seems to be there when you need something.. She recommend a molcajete to me when I tried to order the Cielo Mar Y Tierra. It was my first time eating a molcajete and it was amazing. I dont think I’ll go back to regular fajitas Great service and great food. 10 out of 10.

We placed a takeout order on 12/31 for a family gathering. Several adults and children became ill afterward. When reviewing the food at home, we discovered labeling indicating that at least one item (salsa) should have been discarded days earlier, raising serious food safety concerns. We reported this directly to the restaurant.
While an apology was initially offered, the situation escalated in a troubling way. Instead of focusing on food safety and resolution, management questioned our account and shared receipts and signatures belonging to other customers, including another cardholder’s name and signature. This raised significant privacy and data handling concerns.
Because of this, I have reported the incident to American Express, specifically regarding the sharing of other customers’ payment information. If you dined at this location in December 2025 and use an American Express card ending in 1002, be aware that your transaction details and signature may have been shared with another customer.
Although a partial refund was eventually issued, the process was stressful and mishandled, with inaccurate records and poor communication.
Food safety, customer privacy, and accurate recordkeeping are non-negotiable. Unfortunately, this experience showed serious gaps in all three. We will not be returning.

There is always a long wait at Los Dos. We went on a Thursday night and had to wait 50 minutes! Since they dont take reservatuions, be sure to get there early enough to put your name on the list. Bigger parties take longer. There us a bar area where we ordered drinks while we waited. The house margarita is delicious! With plenty of chips and salsa, we ordered our good once seated. We had a big group and ordered a variety of dishes which were all hot and tasty! Fajitas and burrittos, chile rellanos, tacos, and enchaladas… all good! So much food that there was no room for dessert.
