The place was super clean, we were the only customer there but people started coming in slowly. It was nice and clean, spacious too and service was great! Food came out quick and we did not expect our plate to be this massive I got the carne asada burrito, my bf got the bigger plate, his was huge compared to mines which is the photo shown here. It was really good, I finished my food, and the pricing for 2 people aren’t bad too, you basically get everything in one plate depending on your order.

Ok, so I’ve probably been to at least 35 Mexican restaurants across the Denver area and I would rate this place about 3.5 out of 5. First of all, this places waiting area makes you feel like an outsider looking in. There’s no one to great you right away, you just are hopeful someone notices you from the inside. It’s a bit awkward. I’ve been here about 4 times beforehand and they have changed the wait room. Service was ok. I felt like they were overstaffed and we had to wait a bit to get noticed. I had the fajitas which I felt were average in taste. Comes with all the sides you would expect. We ordered a pitcher of the Valentine margarita which is made with a reposado tequila rather than standard silver. The pitcher arrived with no ice which was a head scratcher. I felt like it was over sweetened rather than a nice balance. I feel like this is just another average Mexican restaurant around the Denver area. You can do better but it’s alright. I wouldn’t go out of my way for this place.

Excellent service very friendly and attentive waitress and we were seated right away. The food servings were plentiful and everything was so fresh and flavorful. The meats were all so tender and well seasoned. Tortilla chips were not too thick or thin just perfect crunch and the salsa (felt like a mild to medium heat) was delicious as well.
I tried the burrito Grande and ate maybe 80% of it. Had to take the rest home and it was really good as a leftover as well. The jalapeño crème sauce was my favorite but the green chili is also very good. The shredded chicken was very good and I absolutely loved the shredded beef.
I didn’t have any room for dessert but definitely plan on coming back again but will get a smaller plate to try the desserts.

Since moving south of DTC, we’ve had a hard time finding a Mexican restaurant we love. Las Fajitas in Castle Pines was our go-to for a close fix. It’s not our favorite but is pretty decent. Lately there’s been a lot of inconsistency with breakfast. I order a chorizo breakfast burrito and get a bacon one instead. Today we ordered omelettes, listed with green peppers and onions, smothered in green chile. What we received were omelette tortillas stuffed with fajita style veggies – onions, peppers, mushrooms and zucchini. It was odd and definitely not what we expected. Some people are allergic to mushrooms, so that could be really disappointing. Just know you may or may not get what you order.

Las Fajitas never disappoints! We’ve been loyal customers for 15 years, and it just keeps getting better. The new addition to the restaurant looks amazing—can’t wait to dine in next time instead of taking our food to go. Service is always lightning fast, the staff is warm and welcoming, and the place is spotless. The carnitas burrito and burrito grande were both packed with flavor, plus creamy sour cream and fresh, delicious guacamole. Serving sizes are huge—we always have leftovers! And their chips and salsa? Absolutely addictive—I’ve purchased many a pint!

Breakfast burrito, to go.. Food was okay, way overpriced $16.00 plus, wasn’t rolled properly was only folded in half. Since it was to go and not rolled it fell apart. Green chili was like water. Also..had to ask for the rest of my change, even though it was .40 cents
