We’ve been watching this team pour months of care, craftsmanship, and detail into building out their restaurant, and the anticipation was real — and they absolutely delivered.
The food is incredible. While there are only a handful of gluten-free and dairy-free options, they are extremely accommodating, knowledgeable, and careful. Every allergy-friendly dish we had was outstanding. Our non-allergy family members have also loved everything they’ve ordered — which says a lot.
They also offer an all-you-can-eat buffet during dinner on weekdays from 4 PM to close, which has been a huge hit and definitely adds to the excitement and crowds.
The staff is professional, kind, and clearly working their tails off. We are genuinely lucky to have a place like this in our community.
Helpful tips for fellow diners:
• They are brand new and already packed — please be patient and gentle as they find their rhythm.
• Dinner lines can get long because they’ve been slammed from day one.
• The team is constantly moving at full speed trying to keep up.
• There are two restrooms, so restroom lines can form during peak hours.
• Parking is good and not an issue.
We’re so excited to watch this place continue to grow and settle in. It’s already something special. ✨
Service: Everyone was welcoming and kind. There were a few kinks in the service, though, such as several waiters asking to take our orders or asking if we had this roll that someone else ordered. I understand it’s opening week however and I won’t ding them for that. They’re doing their best with what they have right now and I appreciate it.
Ambiance: It was small width wise, but had a long space, and the interior was cute. You could see the kitchen and the roll station, and the bar area. There were cute bubble tanks and neon light up signs which boosted the experience.
Overall: For opening week it was pretty good food and service, but they just need to fix a few issues, which I’m sure they will as they get more used to it.

The atmosphere was hip and modern.
The cliff note/TLDR version is that Koi is a must-try affordable AYCE sushi, nigiri, skewer, ramen, hibachi and asian appetizer restaurant; with some of the very best quality food in all of northern Colorado. Many of the flavors from Bowl Izakaya in west Loveland will shine through which immediately made me happy! Koi is like Bowl Izakaya in Loveland and Chubby Fish in Thornton had a baby and I was NOT disappointed! Koi is conveniently located off I-25 in the new Ledge Rock complex next to Firehouse Subs and in the same lot as Wood’s Supermarket.
Walking in you are greeted by a giant cat to your left that is waving and welcoming you in. They have a very large beautifully designed bar with what appears to be seating on both the wet bar side and the sushi making side. The vibe is very modern and the music choice tonight was old school rock and roll which was excellent! Several tables of all sizes surroud the bar and in some areas of the restaurant you have clear visibility to one of the most beautiful kitchens I have ever seen.
Our party all choose the all you can eat dining option. The staff all encourage you to try everything on the menu as many times as you like! Be sure to pay close attention to how many pieces come in a single order when ordering for the group. Most of this info is found on the menu but if you dont know, just ask. We indulged in every available option and some several times. The food was fresh, flavorful, plentiful and outstanding and you will not be disappointed!
After we got there a few others walked in and dined in as well. The restaurant was far from capacity but i believe service will be excellent because I observed lots of staff working in unity with one obvious single purpose, pleasing you, the customer. The service was a true delight!
PSA – if you are a fan of the new style AYCE Ramen & Sushi restaurants and live in northern Colorado or the surrounding area, you no longer need to drive to Denver! We now have one of the best in our backyard!
In summary, Koi officially opens tomorrow 1-12-26 and you deserve this culinary treat! One things for certain, my tribe and I will be there again real soon and I hope to see you there!!!
