The food here is truly standout. The chips and salsa are some of the best I’ve had. Crispy, fresh, and perfectly seasoned. The steak tacos are a must-try, packed with flavor and cooked to perfection.
I tried the blueberry mojito cocktail, which was okay, refreshing, but not quite as memorable as the food.
Overall, Jefe’s is more than just a meal; it’s an experience. From the music to the flavors, it’s a spot I’d happily return to.
I wish they could ship their salsa to Alabama. 😉 It was really THAT good!
Unfortunately, I didn’t know their nachos weren’t coming as trays anymore. The order of nachos comes in a standard leftover size container. That’s my fault for assuming what we would be receiving. However, the chips were absolutely soaked with fat from frying, way over salted (to the point that my kids wouldn’t eat them) and there was no crema on the nachos.
We also got a quesadilla with chorizo. It’s a $19 order if you add meat, which we did, and they forgot the dipping sauce. Not a big deal, but $20 for a quesadilla… we want the sauce.
All in all a disappointment! We have historically loved our Jefe’s, but I fear with prices inflating the way they have, it’s not worth $50 for oversalted, greasy nachos and a quesadilla.
Edited to add: I hear you, Sean. Since it seemed to be a kitchen issue, and we had taken the food home, I didn’t want to have to add 30 minutes to our evening to go pick up remade food. It has also historically been difficult to reach anyone by phone there.
I, a fully grown adult with free will, walked into Jefe’s in Longmont and committed the ultimate customer sin… I told Miguel:
“Just pick something for me.”
That’s right.
I handed over all culinary control like a toddler giving someone their juice box.
Dangerous move. Risky move.
A bold move.
But Miguel?
Miguel didn’t flinch.
He didn’t hesitate.
He nodded like a man who has stared into the universe and said, “Yeah, I got this.”
Then he brought out the CHILE RELLENO BURRITO.
Let me repeat that for dramatic effect:
THE. CHILE. RELLENO. BURRITO.
I took ONE bite and immediately understood religion, physics, love, loss, and why the dinosaurs went extinct.
I saw my past lives.
I forgave everyone who ever wronged me.
I almost stood up and clapped.
And Quinn???
Bro was floating around the restaurant like a hospitality archangel, refilling drinks before hydration was even a concept in my brain.
If customer service were an Olympic sport, he’d be banned for being too good.
Let me say this clearly, loudly, and into the mic again:
GIVE THESE MEN A RAISE.
The chile relleno burrito was hands-down the greatest thing I’ve eaten in my entire existence… up until this exact moment right now where I’m still thinking about it.

My favorites were the cinnamon pomegranate margarita, the ahi tuna and crab cake tacos. Save room for dessert, you have to try the margarita tart. Trust me, it was worth the drive up from Denver. I’ll be back.
