Indigo has scored several best-evers for us. Best tandoori chicken ever — most restaurants do not know how to make it. Best fish curry. First goat, and it was definitive, though a bit too fatty for my taste. Best rice pudding. Genuinely friendly service.
As far as I can tell, this is more of an Indian restaurant, not an Indian/Chinese fusion. I have had a lot of Indian food in many major cities, admittedly none in India, and this is my new GOAT, and not just because of the goat.

We were in the area for the annual Corgi parade, and thus had our dog with us. So we were thrilled to find the outdoor seating at Indigo right along the parade route, and they welcomed our dog. My husband isn’t a huge Indian food fan, but he agreed to it. WOW! What at wonderful experience. Even my husband was very impressed. We had the Garlic Naan and Chile Naan and both were amazing. My husband had the Butter Chicken, and my son had the Tikka Masala. They raved about their choices. I had one of the chef’s specialties, the Mango Lime Chicken and I was blown away. Easily the best Indian dish I’ve ever eaten! The service was great, and the decor is beautiful. 5 stars all around!!!!

We enjoyed both lunch and dinner at Indigo: Modern Indian Cuisine & Bar in Fort Collins, Colorado, and every dish was absolutely authentic and delicious. The butter chicken, lamb chops, and tandoori chicken were standout favorites, each bursting with flavor. The variety of vegetarian options was impressive, ensuring there was something for everyone. All the drinks were super awesome, perfectly complementing our meals. The attentive service added to the delightful experience, making us feel welcomed and well taken care of. Highly recommended for anyone craving modern Indian cuisine in Fort Collins!

We stopped by Indigo this week for lunch. They’ve been open for a month. The food was delectable, the service was incredible and the ambiance is fantastic. We were greeted and seated to our convenience. This is not your “Indian Franchise” restaurant, they’re authentic and one-off which is always refreshing.

They cater to American spice palettes as well as the more authentic Indian spice palettes, which is quite rare as there are only a few options around.

We ordered a few different things to test out the authenticity of Indian food. Detailed review below.

Goat Sukka – we got this “medium spicy”, and it was perfect. The spice was perfect, the goat was tender, cooked well and delicious. The coconut was soothing and made for a nice topping.

Lassooni Gobi – this is their version of the Gobi Manchurian. The cauliflower was fresh, and battered light. It was made fresh to order which is always nice to see. It was a good sized plate too.

Angara Chicken Tandoori – The chicken was fresh, made to order, and sizzled on our table. We loved the spice level, and the marinade had seeped into the chicken, which was refreshing to see.

Schezwan Chicken Fried Rice – It was somewhat of a surprise to see tomatoes in the fried rice, but it was freshly made, and delicious. The spices really came through, and it was refreshing to have a nice indo-chinese fried rice.

Veg Hakka Noodles – Was delicious, light and flavorful. The noodles were a bit oily/soggy, could be improved, but pretty good nonetheless.

Butter Chicken – This was freshly made too, which was refreshing. The chicken was flavorful. The sauce was brilliant.

Chili Naan – This was thin, fluffy/crispy just perfectly cooked to order. It’s nice to have a naan that is not “thicc”. The chilis were subtle and we loved this as the perfect medium for the butter chicken.

Mango Lassi – this was freshly made and topped with saffron, which was refreshing, but with all the food, this was a nice cooling option, but quite heavy as it is pretty thick in consistency.

Malai Kulfi – Its a hearty offering, with two scoops of kesar malai kulfi, topped with tutti fruity.

Overall, the friendly service, the great selection of delicious food, the chill vibe and convenient parking made this a great experience. It’s wonderful to see more “good” Indian options in town along with Bawarchi.

Give them a try and you won’t regret it. Great service. Great food. 5 stars.

We had a wonderful lunch at Indigo today! Authentic and delicious cuisine. We had a lamb curry and chicken tikka masala. Medium heat was perfect. The atmosphere was unique – so much more modern than most yet still retaining an Indian feel. The waitstaff and owners are very efficient and friendly. Great experience. Thank you, Indigo!

The best Indian restaurant in the continental US I’ve been to! I love how their menu isn’t all the standard, Americanized dishes everyone always gets, like butter chicken and chicken tikka masala. Indigo has a really interesting menu with lots of traditional Indian flavors in not-as-traditional dishes. I highly recommend it! Try it out—you won’t be sorry! (P.S.—DO NOT miss their truffle Parmesan naan. It’s to die for!)

If you are craving good Indian food, look no further. The recipes here remind me of food back home but they also have a new-age flair. You’ll see unique menu options like Truffle Parmesan naan, beetroot tiki and lobster tail. But you will also find traditional food items like indo-Chinese appetizers, and Falooda dessert that are rarely available at Indian restaurants.

It was a real treat to experience this business during our day trip to FOCO. I have no doubts they will succeed, and hope they will open a branch in Boulder where you will not find great Indian food options.

Definitely try the goat karahi (I chose mild) and it was cooked to perfection. Also recommend the mango lassi here, seeing threads of a saffron float was a pleasant surprise.

Ibordered 2 plates to go, waited there, atmorphere was nice and service too.
The menu does not show any indication of spiciness for the plates I prdered and none of the mentioned ingredients stated was a spicy one. However our plates were both extremely spicy, we eat lots of apicy food but this was too much for anyone I know.

Very disappointed since we couldn’t even finish one of the dishes. Taste wasn’t good, but aince it was so spicy, it was very difficult to really taste anything.

I’d recommend asking about you plate before ordering.

Fantastic atmosphere, service, and drink list (probably the best mocktail I’ve ever had — appreciate it being sophisticated flavors instead of “sweet fancy juice” like most places). Menu is easily labeled for food intolerances and good choices for vegetarians/vegans! The food was good, but I’m not convinced it’s better than some of the other Indian places in town. I will absolutely return for date nights and look forward to sampling more of the menu…but if you’re getting takeout, it might not feel too different from what you’re used to.
