IN Ristolab Madrid delivers a mixed dining experience with some exceptional dishes overshadowed by service inconsistencies. The service proved decent overall, though it was hard to get the servers’ attention when needed, and water arrived quite late – basic service elements that should be more responsive.

The Our Margherita pizza bun was excellent, featuring great flavors that successfully reimagined traditional pizza in an innovative bun format. This creative preparation demonstrated the kitchen’s willingness to experiment while maintaining authentic Italian taste profiles.

Their service bread deserves special mention as an amazing Italian focaccia that set a high bar from the start. The quality of complimentary bread often indicates a restaurant’s overall attention to detail, and IN Ristolab excelled here.

The Carbonara Explosion proved disappointing, rating as middling at best. It tasted like an okay ravioli filled with too much cream, overwhelming the delicate balance that should define carbonara flavors. The excess dairy masked rather than enhanced the traditional ingredients.

The real star of our meal was undoubtedly the Bolognese Ragu, which was absolutely amazing. The beef was lovely and tender, the sauce achieved perfect consistency and depth, and the hand-rolled pasta was fantastic – demonstrating masterful execution of this classic Italian preparation. This dish alone justified the visit.

Overall, we were too full to try their desserts after the substantial pasta portions, resulting in a decent 4-star meal. If we were to return, it would be specifically to try the desserts and have the exceptional Ragu again.

The food was amazing. The carbonara was an explosion in the mouth! The cod risotto was very flavorful, a really good combination of flavors and spices. The croquette is very well served and really good. The service is amazing! Very attentive.

Service was quite above average! The reviews are spectacular, so the expectations were high.

The star of the night, surprisingly: the pistachio bomb. Followed by the croqueta.

All of the ingredients seemed fresh and high quality. I suppose the biggest disappointment was the carbonara explosion.

The dish was lukewarm. It didn’t appear to have fresh pepper. The cream of pecorino felt far from a more traditional carbonara. And the explosion felt like yema de huevo only. The guanciale was perfect!

I understand it’s a creative interpretation. No critiques, just wasn’t our speed. Everything else was ok! Nice to have the experience at least once!

Food was amazing! I couldn’t stop myself from taking deep breaths in between bites haha. I had the steak tartare and my Lord Jesus (I ain’t that religious)… i was not ready for such a delicate yet delightfully tasty experience. I’ll be back!

I’m an Australian with Italian origins who lives in Zurich Switzerland and came to Madrid for a weekend with a friend. While walking around the city we noticed this Italian restaurant. We ate the following from the menu: La nostra crocchetta; esplosione di carbonara; pappardelle; and finally bomba di pistacchio. The food reminded me of the tastes of Italy but while in Spain.
