My husband and I decided to try Ichiban again after the new ownership took over. We came in for our Valentine’s Day lunch, and WOW we were pleasantly surprised. The owner suggested a special tuna plate and it was AMAZING. We liked it so much that we returned for lunch again today. This time we shared the Sushi Lunch. It was very good as well. I think I found my new favorite spot.

What an amazing sushi restaurant. Sat by the sushi bar and see the chef in action. Everything is very good. The quality is excellent. Will be back again with friends and family.

We love coming to Ichiban! The food is always fresh and beautifully plated. The sushi is excellent. One thing I really appreciate about Ichiban is that their rolls are hand-rolled with care. Nothing feels rushed or mass-produced. The texture of the rice and the balance of ingredients show real attention to detail.
The staff is friendly and makes you feel right at home. It’s a great spot for both casual lunches and relaxed family dinners. Definitely one of our go-to restaurants in town!

I’ve been coming to this restaurant since before COVID, and the food and service have always been outstanding. Even with the recent ownership change, everything is still absolutely top-notch!
The new owner, Jay Choi, is a retired professional golfer and a graduate of the University of New Mexico. He gives back to the local community in so many positive ways. Having spent most of his professional golf career on the Japan Golf Tour, he brings an incredible level of experience, knowledge, and authenticity from Japan.
I’m confident the legacy of Ichiban—hands down the best Japanese restaurant in Albuquerque—will continue to thrive under the new ownership. The quality, care, and flavors are exceptional, and the sushi is simply the best. I will definitely keep coming back and highly recommend this place to anyone who loves great Japanese cuisine

Ichiban has always been one of my favorite places for sushi. The food has consistently been good, and since the new management took over, it is absolute phenomenal! The sushi is very fresh and the presentation was exquisite. The new servers are friendly, helpful, and know the menu well. I am happy to continue supporting this local restaurant and look forward to coming back.

Sushi day with the boys! Ordered Goyza, Una Don, Cali rolls, spicy chicken buldok, and lunch special rolls. Everything was great, kiddos approved .

I’ll admit I’m a bit disappointed this visit. I ordered Spicy Tuna and Shrimp Tempura which were both fabulous. I also ordered the Dynamite Roll, but instead I received the Dynamite appetizer. it tasted fine, but much different than the Roll and not what I wanted. There’s also a $7 price difference so I feel a bit slighted. I’m not going to take away any Stars and I’ll no doubt go back.

This used to be the spot my wife and I would go to for sushi. The fish is delicious, the rolls are beautiful and the miso was the best on this side of the river. The prices have gotten ridiculous and unfortunately priced us out of going anytime outside of birthdays or special occasions. Lunch special isn’t even all week anymore and they don’t tell you till after your seated. If you are ready for a $50 lunch it’s amazing but otherwise it’s too expensive for just sushi

I visited during rush hour and experienced a significantly longer wait time than what has typically been standard at Ichiban. While I understand that peak hours can impact service speed, the overall experience felt noticeably different from what I have come to expect.
Most of the staff appeared to be new or in training, with the exception of the curly haired server who has been there for many years and has consistently provided reliable service. I also noticed that only about half of the usual serving staff was present, which raises concerns about recent staffing changes.
In addition, prices have increased, which I assume may be related to new management or ownership. Unfortunately, the combination of longer wait times, apparent lack of experienced staff, and higher prices made this visit disappointing. As a long time customer, it is upsetting to see such a decline in the overall experience and service. I hope these concerns are taken seriously and addressed promptly.
