Working closely with local farmers and craft producers, Hyacinth’s offerings are ever changing showcasing the creative whims of the kitchen, bar and service teams. Hyacinth is named after the street Founding Chef Rikki Giambruno grew up on in Victoria, MN. we ordered 3 appetizers: liver mousse crostini, housemade flatbread and radicchio salad and the liver mousse is the best out of the 3. for the mains we got bucatini, fusilli, mezze maniche, cotechino sausage and duck breast. i would say the best was the duck breast followed by the mezze maniche but only because i like punchy pasta. the only one with protein is fusili order that if you want protein in your pasta. lastly we also got the amaro flight and the austrian amaro was my fave out of the 4. other than the food, the restaurant vibe reminds me of a classic european restaurant. overall recommend going here.

My dear friends and I have a tradition. We celebrate each of our birthdays at stunning restaurants. The 4 of us have been doing this for quite some time. Now Tonya and I are Scorpios; we are November babies. We chose Hyacinth for our celebration. The food is absolutely scrumptious.

Appetizers:
The TREVISO RADICCHIO SALAD with candied walnuts, valdeon blue cheese, and zinfandel vinaigrette was delish.

The BADGER FLAME BEETS was phenomenal with the surprise burst of ground cherries and pistachios in your mouth.

The SQUASH CROSTINI was such a delightful surprise. I love pecorino romano cheese, don’t you!

We 4 gals shared a bottle of bubbly rose.

Entrees:
FUSILLI. The beef chuck ragu was oozing so much flavor; it embraced each piece of fusilli with love.

BUCATINI. So good, it made me cry. I do love a good Bucatini.

MEZZE MANICHE. OMG, just order it. You won’t regret it. The cheese is mmmmm.

Dessert:
The PANNACOTTA was textured perfectly sweet and tart with grape syrup.

The serving staff is so sweet and attentive. I love how discreet this restaurant is. The whole experience was fun and intimate. The perfect place for a celebration and a gals night out on a windy chilly Fall evening.

Everything we ate and drink was incredible. I got the Marmalade Spritz—divine. My bestie and I shared two salads (the watermelon & zucchini w/ ricotta), and two main courses (the Mezze Meniche which was a beautiful pesto w/ walnuts and anchovies and the crispy risotto). All filled us up with flavor, texture, veggies (and fruit!), and deliciousness. The Mezze Meniche pesto reminded me of my mom’s walnut pesto and I had a nostalgic experience eating it straight out of “Ratatouille”. Our waiter was a delight, giving us good insight to our meal and questions. My bestie and I haven’t had a sit down meal together alone in years and this was a very special evening

This cute little restaurant has been on my list to try for awhile, and we finally dined there Saturday. We had a rather late reservation, but we called, and they were able to move us an hour earlier. That is really nice!

The food is essentially new Northern Italian. We started with cocktails and small plates. They have a small selection of house designed cocktails, or you can get one of the 4 most common cocktails. I ordered a drink they called the Haselhoff, made with hazelnut gin, serpoul thyme liqueur, and something called besk, which a Swedish liqueur made with wormwood. It was basically a martini. It was way too nut-forward for my taste, but my husband loved it. He had a Manhattan, which was good. Our two antipasti were good. The arancini were delicious, and served with a spicy tomato sauce. I loved the chicken liver crostini, which was topped basically with a chopped salad. Quite unusual, and maybe a bit vinegary for the liver, but still tasty.

We shared a delicious pasta, mezze maniche, which was a carbonara, with pancetta and pecorino romano.

We shared an order of hangar steak with a cognac peppercorn sauce and a really unusual risotto dish, called risotto salto. It was essentially a risotto pancake, with a crispy top, and sitting on a bed of mushrooms, walnuts, and cheese. Surprising and yummy.

They have a limited but nice wine list. The most interesting, and unusual thing, is their very extensive list of amaros and vermouths. They offer flights. We did not have one, but the majority of the tables had ordered a flight.

My one complaint is that it is very noisy. With the high ceilings, it is very, very loud.

The service is very personable and attentive. Dinner here is really quite nice.

Consistently impresses me. We’ve been four times and Hyacinth has earned its spot in my top 5 favorite restaurants in the Twin Cities (which is NOT easy to do). It feels like a New York restaurant, upscale, unpretentious, inviting, and delicious. The fried olives and desserts are always fantastic. Each entree has been amazing! You have to go if you haven’t been!

The ambiance is great and the food was quite good. Loved that they had a wide array of ciders to choose from. We had five people and an infant. We split the watermelon salad and the squash crostini – both of which were great. I had the Pork Coppa for the entree and while it was good, it was $40 for a small/medium cut of pork with vinegar and fried radicchio on top. I was a little underwhelmed by what I got for the price.

Overall, nice vibes and some inventive dishes, but the pricing is a bit questionable for certain entrees. Next time I would probably get one of the larger pastas and split it with someone; that seems like what a lot of other people were doing!

Dining at Hyacinth was a true pleasure from start to finish. Bradon took amazing care of us, and we felt so pampered throughout the entire experience.

This was our first time at Hyacinth, and we decided to stop in for a belated Valentine’s celebration. After reading the reviews and perusing the menu, our expectations were quite high, but I have to say that they were exceeded by the experience. First of all, the vibes were immaculate— cozy, elegant, and humming with energy on a Saturday night. I loved that it wasn’t stuffy or pretentious but still felt like fine dining.

We decided to go all out and ordered a ton of dishes from the menu— NA sparkling wine, marinated white beans, scallops, squash crostini, roasted radishes, cacio e pepe, linguine a la puttanesca, and panna cotta. Each dish was thoughtfully crafted and full of punchy flavors. I loved the marinated beans with preserved lemon and a mix of herbs. I also loved how peppery the cacio e pepe was. The blend of textures in the squash crostini was excellent too.

Many of the dishes had ingredients that aren’t usually my favorite, but they all shone in this context. I was skeptical of the scallop dish, because the texture of raw scallops is usually a turn off, but these scallops were fresh, buttery, and savory. The panna cotta was another star dish. It tasted like elevated rice pudding in the best way!

My only small critique is that the cacio e pepe wasn’t as creamy as I had hoped. The pasta was perfectly cooked and so peppery, but I was hoping for a thicker sauce. The flavors were on point though.

We loved our experience, and we left with full stomachs and a smile on our faces. Can’t wait to go back and try more fantastic creations.

Small but classy place. I loved the food. The tastes of everything from appetizers to dessert were very well balanced and leveraged different ingredients like yoghurt and tahini. I am from Mediterranean region and I would recommend this place who would like to taste nice flavors from the mix of Mediterranean countries and cuisines. We were group of four and tried different dishes and shared everything. 5 appetizers, 2 main dish, 2 desserts and 3 alcoholic drinks per person, we paid around 100 usd/person.

Last night was our second time at Hyacinth! We were celebrating 4 years of dating. Our server, Hanna, was excellent and attentive! We ordered two different red wines with dinner, the Dolcetto and the Cab Blend. Both were lovely with the food. The appetizers were the stars of our meal, last time we had the fried olives and the bread and loved them. We wanted to try different ones this time! We had the Roasted Cabbage and the Crispy Mushrooms. We scraped the sauce from the cabbage bowl and even ate the crumbs of the mushrooms. For pasta we got the Mussel Linguini and the Fusili Ragu. We didn’t think either was super special. The linguini had an earthy taste with the Saffron and the Fennel. The Fusili felt like something we could make at home. For the entrees we got the Risotto and the Skate. The Risotto tasted like a Midwestern thanksgiving cheesy potatoes… but fancy. So if you’re into that then this is the dish for you! We personally didn’t think it made sense as an entree. The Skate was really unique with the grape sauce! Last but certainly not least, the Rum Cake was worth saving room! The Earl Grey and Orange flavors were a party. In the end we’d order the apps again and the dessert again, but we would try the other pastas and entrees. Thanks for a good meal Hyacinth!

No notes! Beautiful meal, 4 guests and we shared 4 apps, 4 entrees (2 large and 1 small pastas) and the desserts. We were very impressed by the seasonality and freshness of the dishes. Their chefs and cooks really hit the right balance of flavors, textures and presentation. Our favorites were the burrata and flatbread (seems like a staple), snap peas (must try while it is on!) and the 3 pastas were also delicious! 3 of us were not drinking and were satisfied with the NA options. My partner and I will be back another time as the wine and amaro selection look amazing. Service was exceptional from entering the space until we left.
