this is a smaller place, but the staff are wonderful and the food outstanding.
I’ve had a couple of dishes there I’ve not found in other restaurants, and of course they don’t have some things those others do, but everything has been outstanding.

we went in the first time not realizing El Indio was gone and had been replaced with Huatulco. I was momentarily sad, but the staff made us feel welcome, the food was great and we just keep going back when we’re in that direction.

I was on my way to another B-Town restaurant to enjoy their Friday Fish special. When I passed Huatulco, I had a change in my cravings. I decided I wanted Mexican, so I quickly pulled into their parking lot and entered the restaurant. To my surprise, when I went to check-in on Yelp, it wasn’t available so I get to be, First To Review.

The ambience is super clean and more of a minimalist decor instead of your typical Mexican bright colors. I was seated in a booth with a menu and was quickly presented a basket of complimentary chips and salsa. The chips were thin and crisp. Their salsa was flavorful, but it was super thin and I prefer mine to be chunky. As my beverage, I enjoyed a small regular Margarita with no salt on the rim. It was refreshing and did not have that strong lime mix taste.

I ordered Bean Dip as an appetizer. It was a perfect accompaniment to the chips. I enjoyed the Bean Dip more than the salsa. As my entree, I had the Shrimp Tacos. The shrimp was served in small soft shells, topped with lettuce and shredded cheese and mango de gallo. They also had a sprinkling of cilantro. They were so good, that I now want to go back and try their Shrimp quesadillas.

I’m glad I changed my mind about my cravings and gave this new Mexican restaurant a try. It was well worth it and I definitely will return.

The food is usually pretty good, with some unique dishes that most Mexican restaurants around here don’t have. I also appreciate that it is always clean. Even the menus are printed on very heavy pages that can easily be wiped down.

Tucked in between Bethalto’s hit-and-run drive-through convenience store, a laundromat, and Foxes Boxes, this tiny little Mexican restaurant is almost unnoticeable. For me, 11:15 AM on a Saturday: It was the perfect place for me to stop and have a quick lunch. I grow tired of fast food, and thankfully, although I was in a hurry, my order came out very quickly and exactly the way I wanted it!
I do honestly appreciate it when I make a request at a restaurant, and the staff does their best to comply. Since I do not like fried tacos, (the concept of the “fried taco” reminds me too much of the ones served at Jack-in-the-Box) I asked the male server to tell kitchen staff not to fry my tacos, but that I just wanted a regular crispy hard taco with ground beef inside of it. He did not argue with me, he just said “sure,” and that’s exactly what I received. The salsa and chips were good too, and they serve Coke products (my favorite drink).
Since my tacos did not have to be fried, my order must’ve come out in under 10 minutes and I was not running late returning to work because the service was so prompt. Now I’m sure the wait time will be longer if the restaurant is busier, I just happened to walk in here when no one else was here!
They are reasonably priced: They serve a lunch special every day from 11 AM to 3 PM. I ordered the two crispy taco plate with rice and beans and the chips and salsa and drink, the meal was very filling. (Now if you are bigger eater, they do have bigger plates that will probably cost a little bit more)
I think I got a good value for the price paid and I feel very full and satisfied. It is highly likely that the next time I am in the mood for Mexican food every so often, I will be a return visitor. I also will probably try Fox’s boxes some morning, as I am in Bethalto several times a week for business.

Huatulco has become our go-to Mexican restaurant in the area. The food is delicious and they even had some great suggestions for my husband who is diabetic. Service, we’ve only had one time when our service wasn’t spectacular. We also like the atmosphere, the music that’s playing isn’t too loud so you can still have a conversation.

We were the first ones last night, but from the time we sat down till we walked out of the restaurant, we felt personal attention.
Jesus came by to check on drinks, if we wanted more chips, and if the meals were acceptable fairly often.
The salsa was tasty, the chips tasted fresh and warm, and we had a guacamole dip that was creamy, well spiced and had the right amount of vegetable chunks.
For my meal, I had Tacos Del Mar, three soft tacos filled with crab meat and shrimp. The meat had a hint of Old Bay (which can be overpowering) and simmered in butter. The shells were blue corn tortillas and had corn off the cob, red cabbage, queso fresco, cilantro, with a tangy mayo sauce on top and lime.
The only downfall to this meal was that the shells didn’t hold up to the filling very well. But the tortilla chips served dual purpose for the leftover fillings.
Rice and beans were side items for the meal.
Overall, I will be back, and I have 2 daughters who love Mexico food that I think will enjoy this experience.

Went here last night with family and loved it! We got a margarita pitcher and it was so good! I had the burrito al pastor..the marinated chicken in it was delicious. The service was friendly and super fast. I’ll definitely be back when we come back to town.
