Hidden within Siam Thai, an underground Thai restaurant in Queens, New York, Himitsu invites guests on an unforgettable culinary voyage, blending the art of Japanese omakase sushi with a secret speakeasy atmosphere inspired by the intimate warmth of Japanese listening bars. At Himitsu, omakase means leave it up to the chef but we take that philosophy one step further: we also leave it completely up to you. There is no pre-fixe pricing here. Our menu is entirely à la carte, built around whatever you are in the mood for. With at least 18 thoughtfully prepared items to choose from. Our beverage program features a diverse sake menu and you are welcome to just come in and enjoy a glass without ordering food.

My first omakase since I’ve returned from Japan and came to meet my friends. I miss the ocean from here and all the delicateness of the fishes to be enjoyed. Every bite and conversation with the chef and server gave me memories to return to. I’m reminded strongly of the moment I shared drinks with a friend over milt and baby squid and how all the eccentricities you wish to know are worlds away waiting for you to go catch them.

The chawanmushi was so warm and inviting. I would have liked more ebi but I was already so full and satiated by the end. Maybe next time I should order more. The hand roll just completed everything for us with how every fish we’ve tried rendered into these few bites. While I don’t remember all the fishes, I’m thankful for the souvenir menu to remember them by.

Every omakase has their own charm. This one was exceptionally traditional while catering to all the visual accents of modernity as best it can without sacrificing the experience of what you’re eating. A hallmark of experiencing Japanese cuisine through cleaning your senses. 10/10 would go again in a bigger group.

Easily one of the most beautiful and peaceful places we’ve been to for omakase. So many places now are too loud or too casual. It’s hidden away in the back of the outer restaurant so there’s immediately a sense of intimacy that many places in the city are lacking.

The menu is unique, which is something we’ve been looking for; it’s not the repetitive same pieces as so many locations have. No over-the-top gold flake on caviar on uni on wagyu monster pieces. Each nigiri is simple and beautiful. Special appreciation for the eel, which is buttery soft and melts in the mouth – something I love and have only found at 2 places.

Chef Ken and the host Joseph are both phenomenal, warm, and professional. They give plenty of space but are completely open to conversation. Chef Ken is extremely attentive to his work, and Joseph is completely on point when it comes to his service.

Overall we were both very happy with our experience here. It’s definitely a hidden gem.

The decor is lovely, and the speakeasy vibe is unique, but in my opinion, it’s a bit pricey for what they’re offering. The fish portions seem thinner compared to other Omakase spots I’ve been to in the city and Queens. The standout dish was the Uni from Hokkaido – it was fantastic and definitely better than West Coast uni. Overall, it’s a nice experience, but I’m not sure it justifies the $165 per person price tag.

One of the best values in omakase in all of NYC. And top three in my entire lifetime. The host, Joe, was so warm, friendly, and attentive. Our chef Eric was extremely kind and generous. One of the best omakase experiences we’ve ever had! *Pro-tip*: come on a weekday for a more personalized and intimate experience (fewer guests).

Highlights:

– Fantastic fish and seafood quality. One of the other reviews mentioned another omakase place that they thought had better quality fish: we actually thought Himitsu’s fish quality was better.
– Simple and thoughtfully delicious menu items (no over the top gold flakes or wagyu-on-uni-on-fatty-tuna here)
– Great service and hospitality. You’re not rushed, so you can savor every moment. We also thoroughly enjoyed our wide-ranging conversation with Chef Mark and his sous chef Jeff.

Other details:

We found this place while searching “omakase” on Google Maps. Chef Mark designs his own menu and updates it frequently. He and Jeff added several other personal touches that made it a night to remember for a long time! Look up Chef Mark on Eater: you’ll see how much of a craftsman he is when it comes to his food and the experience he gives his customers.

The chef innovatively uses squid ink-soaked black rice, presenting an enticing black appearance and a subtle oceanic taste that complements various sashimi, enhancing the flavor.

Dessert is crispy crackers combined with cool lavender ice cream, not only refreshing but also rich in floral fragrance and sweetness.

The most fun I’ve ever had at an omakase experience. This speakeasy omakase is hidden inside siam Thai Once inside you are transported into an elegant and upscale sushi bar. Shout out to chef mark and Leon for an amazing omakase experience, while also providing a chill and inviting environment. Sometimes I’ve been to Omakases and it can be so quiet you can literally hear a pin drop. But not this place! The chef and I were constantly chitchatting and we even chatted with our seatmates.

If you order sake – you can choose your vessel from a beautiful LV box. I loved this idea – made it so much fun. The sake is served in a super cool dispenser with a block of ice to keep the sake chilled. I tried a few sakes and they were smooth and delicious.
The omakase consists of 3 appetizers, 10 nigiri, 1 roll, and 1 dessert. The portions were huge and it was actually very filling. I was stuffed at the end! Overall everything is delicious, but my favorite was the scallop, fatty tuna, and the uni. Each piece is simplistic yet delicious. What makes this place unique is the chef invented a rice for the sushi that is nutrient rich. It has 4 types of vinegars, Irish salt, and maple syrup. I definitely felt less bloated when eating the sushi with that type of rice.
The dessert was a mascarpone gelato. So refreshing and a great ending. Also this place serves seasonal dishes so the appetizers, nigiri, and dessert will change. Great excuse to come back again!
At the end of the meal, they give you a personalized copy of the menu with your name. Another thoughtful and cool idea. Really such a fun experience- will definitely recommend this to everyone.

This was a fun, unique, Omakase experience.
It is located inside Siam.
You notify the Siam check in staff that you have a Himitsu reservation when you arrive.
Aim to be on time, but you have 15 min of grace period. A 5:45 reservation starts at 6.

Sake is recommended and the descriptions on the menu match the flavor profile. The limited edition sake menu is much more expensive.
