We were on our way from San Antonio to Fort Worth and in the mood for BBQ for lunch. Looked up on Google Maps a place for good BBQ on our route. We originally thought we’d stop at Buc-ee’s for a quick sandwich, so glad we decided to try somewhere else.
We ordered the two meat plates each. Both of us got the ribs and one got the brisket and the other got the sausage. Side orders were the beans, potato salad and cooked cabbage. All three sides were over the top delicious.
The meat was smoked excellent. Love when the meat falls off the bone. The BBQ sauce was phenomenal.

Highly recommend Hillard BBQ. It was the best choice we could’ve made.

Went to get brisket sandwiches with my boyfriend and I can say this is one of my favorite bbq place in waco! The potato salad is AMAZING!! The bread was soft:) not soggy at ALL.We will definitely be returning to get the ribs next time!! The price is great for students as well☺️ Very friendly as well! Hope to visit again

Southern Careers Institute used Hillard BBQ as a caterer for our Thanksgiving Feed the Students Campaign this year and boyyyyyy was it fantastic! The smell alone had all of us buzzing around the table hoping there would be left overs after ensuring the students were filled up…once we got a taste of that Potato Salad and the meats, it was all over. We made sure nothing was left! So delicious, professional, and affordable, huge fan!!!

I work at Southern Careers Institute and we had a “Feed the Students Campaign” today and Hillard catered it was wonderful would definitely use them again the potato salad tasted just like homemade does and the chicken was so tender that it fell off the bone.
