Java is set along the beach. As you enter the restaurant you are met with an amazing view and the tranquil sound of the waves rolling across the sand.
My family dined at Java around dusk. Such a beautiful view. We were welcomed and seated immediately. The waiter was extremely helpful navigating the menu. One person in the party had a dairy and egg allergy and he worked with chef to plate a shrimp pasta dish.
Meal:
Starters – Lobster Guacamole – 6 / Bland. Avocado lacked seasoning and salt. Need cumin, lime and a little spice. Warm bread and olive oil accompanied the Guac. It was delicious.
Caesar Salad – 8.5 / Fresh, great balance of flavor.
Entrees – all of the entrees lack complexity or depth of flavor and were bland or salty.
1. Gambas Sauvages (Shrimp and pasta not udon) – 6 shrimp was cooked perfectly. It was a little salty. Pasta and vegetables seemed a side note to the shrimp. Flavors did not bland together. Meal was okay.
2. Boeuf Angus 5 (2x) – poor cut of meat; peppercorn dominated an otherwise bland piece of meat and sauce. Potato gratin was solid.
We did not wait around for dessert. Between the less than memorable meal and the arrival of the bugs, we ended the evening early. The bugs situation got intense. We had to turn off the lights on the table.
Atomsphere: the music (I forgot to mentioned the electric violin and music. So beautiful), the view and the aesthetics are a VIBE.
Recommendations/Suggestions: while my family will not be back, I would recommend trying Java especially during dusk. Try and stay clear of lights at the tables to keep the bugs off the table and food.
If you do not read/speak French, ask questions about the meal before ordering, to manage expectations. Things get lost in between the French to English translations. Also, checkout the specials of the day.

Parking was right across the street making this an easy location for dinner
We dined at Java and it was simply perfect from start to finish.
The quality of the dishes is remarkable: original flavors, fresh and expertly prepared ingredients, and a refined presentation. Every bite was a true delight.
The service was attentive, professional, and warm without being intrusive. The restaurant’s ambiance is both elegant and spacious, ideal for a dinner with friends or a romantic dinner for two.
Special mention goes to the harmonious flavor combinations and the creativity of the dishes—they demonstrate true culinary mastery and attention to detail.
I wholeheartedly recommend Java to anyone looking for a great meal in Saint Martin, with a gastronomic experience that is truly worth the trip.
The Service: Loved our waitress for her patience. We took a while to decide what we wanted but definitely didn’t feel rushed. She was kind and understanding. 10/10
The Classic Caesar Salad this wasn’t the like the traditional Caesar Salad and that’s what I like about it. My favourite part about it is the cheese, lettuce and bacon. The boiled egg gave it an interesting touch. I rate it a 7.5/10
The Aperol Spritz is just too much on the strong side for me. In order for me to truly enjoy my drink there has to be at least an 80:20 ratio of juice to alcohol and this was nowhere near that! Therefore for that I rate it a 4/10
L’agneau the Lamb Shank with mash potatoes and vegetables was delicous. The lamb was fall off the bone tender so you know it went down nice! The mash potato was good just would have preferred if the entire texture was to be smooth. There was a chunk of potato that I didn’t expect but trust it was still good. The broccoli nostalgia because it was a familiar taste that I really loved. I just couldn’t pin point where or when I tasted something so familiar. The vegetables were tasty! This Main Course gets a 9.5/10 in my book.
The Profiteroles is a cream puff. So you know I saw this and thought that it was crunchy but was surprised by it’s softness. Our Chocolate was no longer warm and was hard to pour out and I think I would have enjoyed it more without the chocolate. But the ice-cream and profiteroles carried it off so I rate it 7/10.
Overall the rating is 8/10
