Taking my first bite of stuffed mushrooms, I was instantly transported to a previous life. Standing in the waist-high prairie grass, watching the Frisco train fly by with its East Coast elites rushing further west. I felt the breeze of the train wash over me, gently pulling my jacket around me, the taste of the day’s catch still fresh in my mind.
Suddenly, j was transported back to the restaurant. “Sir?” Billy looked at me, concern spreading across his face. “Yes,” I responded. “Something tells me the catfish is good?”
Dear reader, it is difficult to convey how delicious the catfish was. And it was not just the catfish. It was the cole slaw that accompanied it. Delicately seasoned with only a hint of vinegar, the finely shredded cabbage and peppers refreshed the palate in between salty and savory bites of lightly breaded catfish.
Also, Billy and Trisa are fantastic hosts. They are saints for tolerating our shenanigans.
