Our Friends had the Fish and Chips and Seared Bluefin Tuna Special. Excellent choices. Drinks were great!

We’d been wanting to go here for several years and finally made it out. What a disappointment.
Pros- the mussels were very fresh with a delicious sauce and great sourdough.
Cons- the cocktails were fine. Nothing special.
Fish and chips were mediocre. The batter was very thin and the fish was dry. For a $30+ meal, do something to the ketchup or make another sauce. And serve it with lemon.
The mushroom fried rice was a disaster. The rice itself was extremely salty, borderline inedible. The mushrooms were overly sweet and there was nothing special about it. It needed spice and acid and texture. It was a bowl of mush and soft. There were even clumps of white unseasoned rice throughout. Rookie dish and so pedestrian.
Our waitress was more worried about upselling us than checking in throughout the meal. Never asked about dietary restrictions or allergies. She had zero personality and it really made the meal even more boring.
Overall will not return. Such a disappointment and it ruined my husband’s birthday dinner.
We had dinner at Flux after a Bates Graduation, and we drove from Lewiston because of the positive reviews. Our steak came burned on the outside, raw on the inside, and covered with grease. Our complaint to the chef was met with — well, distain. The chairs were uncomfortable, and the room was too loud without shouting. Other than that, it was perfect.
Afterward I searched to see how Flux managed to get such positive reviews. I found glowing newspaper pieces celebrating the unique Flux vibe, and saw that — amazingly — some people had driven for 3 hours for the Flux experience.
Having now had had a full dose of Flux, I am relieved to say that this one will last me a lifetime — and there were no lasting side effects.
My local friends are regulars, and it’s genuinely so sweet to see them interact with the staff and other familiar faces. Flux perfectly captures that homey, small-town vibe without sacrificing atmosphere or culinary quality.
The food and drinks are consistently divine—I’ve never had a disappointing experience.
One of my all-time favorite cocktails is the La Latina, and I highly recommend the mussels and poutine as appetizers. As for entrées, you truly can’t go wrong with anything on the menu, but I always find myself ordering from the specials.
A must-visit spot every single time.
Recently had flux style oysters and I was in awe! I didn’t realize how much better a plain raw oyster could get! The Asian salad has an amazing dressing with light heat and high quality sprouts and veggies with a perfect combo of the thin rice pasta (can’t remember the exact term used for the kind of pasta)
Steak frites on the wilted green combined with hand cut fries is SO good. I was pleasantly surprised how tasty the greens were. My partner had their rabbit special with house made pasta and he was in love. The cheese cake is so yummy and I love it is a gluten free option. A recent dessert special was tiramisu and cannoli and my partner said it was the best canoli and tiramisu he’s ever had!!! We love the berry spritzers altho not a fan of the taste of a paper straw. Would love to have a plastic option or glass.
My only downside to this place is I’m not a fan of their water options. Tap water does not taste good to me and not a fan of the sparkling water option myself. I’d love to see Saratoga water at this place!
