I’ve had a lot of barbecue in the area. And this one just blew my mind. I don’t know how I haven’t heard of it before. The brisket melts in your mouth and that’s what i’m always looking for in a good barbecue restaurant. The pork belly bites better than I can do at home and it’s hard saying that. The seasonal sausage right now is killer with cranberries layered throughout. There’s not a bad thing on this menu. And try to buy extra cornbread because it is so soft and so flavorful. The experimental barbecue sauces – I’ve never had anything this good.I’m running out of description words…..

Coffee BBQ sauce? Pastrami pork belly + mustard sauce? Street corn side that’s not just frozen corn + Tajin? Oh, YEAHHH…
This time, we got prime brisket, the garlic z’aatar chicken thighs & their assortment of pickled veggies + a sample of the pastrami pork belly.
Shoulda grabbed the harissa potato salad too, but we forgot.

These cats are cooking up the best BBQ in Clark County! Being from Central Texas but living in the PNW, I had mostly given up hope on finding any authentic tastes of home. Their brisket is on par with the best from Austin. Every dish they make has amazing flavor combinations that will delight your tastebuds and leave you wondering when you can get your next fix.

Some of the best BBQ I’ve had with fun, irreverent twists and amazing sides (I still dream about the creamed corn with chili crisp). There are rarely repeats on dishes so there’s always something new to try. The brisket is cooked perfectly every time, falling apart with a nice, even bark. The sauces perfectly complement the meat without overpowering it (also include playful flavors, like coffee!). Get every dish they serve and go on a little flavor trip with each bite. You won’t regret it! Great local Washougal food!!
