I knew it would be good, but ho-ly smokes! From the moment we walked in the door, my chronically overalled friend and I were treated like kings! The first roll I inquired about was, of course, the “BBB Roll” ( Big Back Ballew’s Food Reviews ). The moment the itamae heard that I had a question, he appeared before us with all the answers, a smile, and a twinkle in his eye that could only belong to someone with a true passion.
Within minutes, dishes began filling the bar in front of us. These weren’t just plates of food, they encompassed exactly what sushi was meant to be, a genuine art form. We started with the surf & turf roll, as it was the special that day, and added the BBB for good measure. The homie argued that the surf & turf was better, but he was clearly delusional. The BBB roll hit harder than a wasabi sneak attack. The bit of lemon zest on top… chef’s kiss x1000!
Next came the centerpiece of the entire experience, a sashimi sampler that made me pinch myself, twice. As we stared in awe, the sushi master himself re-emerged, bearing a roll that looked like nothing I had ever seen before. An off-menu item, for us?!? More pinches. Somehow this wasn’t a dream.
As he began to break down for us in great detail everything laid before us, I realized that this experience likely wouldn’t even be possible in Japan. This was the real deal. Fresh-made wasabi on Blue Fin, braised salmon belly, halibut this, and eel that. I’m no expert, but this gentleman certainly was. The off-menu roll? He said it was something he had worked on as a Christmas special, originally to be called “The Mini Grinch”. I’ve never tasted a more perfectly balanced roll in my life! Crawfish and shrimp tempura, topped with seared tuna, and drizzled with a sauce crafted from wasabi mayo and ponzu. I could live off this roll!
Back to the sashimi sampler, though. We started with the braised salmon belly, topped with an extremely flavorful roe. Folks, when I say this fish melted in my mouth, there is zero exaggeration. The only comparison would be cotton candy. He informed us that we could likely request this at any sushi restaurant, but I wouldn’t dare risking being served anything less. As we moved forward, through the selection, we began to notice a trend. EVERY SINGLE PIECE melted in our mouths. As my perpetually-denim-bibbed buddy mentioned, this made me wonder if perhaps every other cut of sashimi I’d ever consumed had been cut wrong. The bites were never less than a 20/10.
The takeaway: I will never look at sushi/sashimi in the same light again. This wasn’t just a meal, it was a life-changing dining experience.

Final Verdict: I would give up crawfish, lobster, crab, and tacos if I could eat here 3 times a day.
Several pieces had more than twice as much breading as chicken, and a few were mostly breading with very little (or no) chicken inside. A small number of pieces were closer to
“lightly breaded,” but it became a guessing game, and it honestly ruined my appetite.
I’m not trying to be harsh, just honest. I’d appreciate it if the chef/management would either tighten up the consistency (so it’s truly lightly breaded) or adjust the menu wording so customers aren’t misled.
On a positive note: the crab puffs were delicious.
