To thoroughly enjoy this restaurant you need time…a lot of it. Make sure you’re not in a hurry. We arrived at 10am, sat down approx 45 minutes later and weren’t finished until ~1:25pm. In this timeframe we were served 4 rounds of food and 1 dessert . Everything is freshly prepared so it takes a bit of time from one dish to the other.
As for the food itself, everything was well seasoned and delicious. There are both meat and vegetarian options. As you may already know there is no food menu (there is a beverage menu) however they do cater to allergies and food preferences.
Great communal ambiance and wonderful flavors. Overall this was a lovely experience; just make sure you have the time to enjoy. ✌

We arrived at 8:50 in the morning and supposedly the restaurant opened at 9. The staff told us that on that day they would start service at 9:30. Not that big of a deal so far. There is no menu in this taco omakase type of experience so you will get a dish and then the staff will ask if you want to continue to the next dish, although you won’t know the exact taco you will get next. However the service was slow since the first round with dishes coming every 15-20 minutes on average. One of the cooks had an accident in the kitchen and she had to be transferred by a colleague and understandably that slowed the service even further from the third round onwards. Completely understandable and hopefully nothing serious for the cook, so further delays was not the issue, rather the fact that in the morning shift even when there was a full roster the pace was slow. Moreover it wasn’t until round 6 or so that some other members of the staff arrived for their shift and we started getting explanations for our dishes, before that they just served it without walking us through it neither in English nor in Spanish. People that came later actually got explanations for all dishes and were served at a faster pace. The inconsistency in the service level is what had the most impact to me in terms of the experience and that’s without of course considering as an issue the slow pace after the kitchen accident since the time between each round was substantial before that. I understand that the kitchen during opening will need to accommodate a large number of guests at once, but that’s something that should be accounted for especially for a restaurant with a Michelin star in which the consistency in the experience is one of the main factors to its success. In terms of the food itself, I would say that it was good but most of the dishes were not memorable. The highlight is the handmade tortillas. Considering the waiting time which can be over 3 hours, the level of service and the taste I think there are better options overall in CDMX.

We went there around 5 PM and were only able to get a table around 7:30 PM, so be prepared for a wait. The concept is interesting, the atmosphere is cozy and the food is really fresh and tasty, but overall it felt a bit expensive for what was offered, with some dishes becoming repetitive and the tacos too salty for our taste. After three courses we asked only for dessert (which was my favorite dish, really amazing), yet coffee was also brought out automatically and added to the bill, which we didn’t really want, especially late in the evening. It’s also worth noting that payment is cash-only, which felt inconvenient for a place with no menu or clear pricing. The experience is certainly unique, but a few details made it less enjoyable than expected. Worth trying if you’re curious, but go in with realistic expectations.

Tried this spot for a special occasion with my partner on a Friday. No reservations only walk ins with a wait list. They give you a call when a spot will be avaliable so you aren’t stuck lined up in front of the store. For us the wait was a bit over 2 hours but near the end of the meal waitlist was up to 3 hours so plan accordingly. The food is absolutely phenomenal, great flavors and combinations with unique additions to classics as well. We liked all the food we ate except for the coffee they served with dessert which was too acidic for our taste. The only downside of the restaurant is the limited large seating with benches that are not comfortable and hard to move and half the seating being under tress which lead to leaves and debris falling into your food and drink while you are trying to eat. It’s a bit pricey but worth it, I will be returning in the future but won’t make it a weekly trip.

*CASH ONLY* Great experience. There is no menu, you sit down and you eat what the chef’s are making that day. The waitress will keep bringing you 1 plate at a time until you say stop (you can eat up to 6 I believe). You are seated with strangers which is a great way to meet new people because there are no single tables, just long benches where everyone at the table gets the new dish at the same time.

Expendio de Maiz in Mexico City offers a unique, no-menu dining experience featuring creative dishes made from heirloom corn. The experience is very unique, no fixed menu. You tell them your dietary preferences or restrictions, and plates are brought out continuously until you say stop. The food is fresh, flavorful, and beautifully presented, earning it a Michelin star. Expect communal seating, cash-only payments, and a casual, rustic vibe. Perfect for adventurous eaters who enjoy letting the chef surprise them. No reservations can be made. If you prefer a very structured menu, more private seating, or use card payments, you might find it a little outside your comfort zone but the trade-off is a memorable, authentic-feeling meal with serious food quality.
Go for early lunch to avoid waiting.

We came for a late lunch and it was an incredible meal in Mexico City.
There’s no menu. Courses just keep coming until you say stop, and while they do tend to look similar, the dishes were actually very different from each other. Everything was excellent, but the one we keep talking about was the dessert. A seemingly simple biscuit with cream and honey truly ended the meal on the perfect note.
Expendio De Maiz is set up unlike almost anything else. Four shared tables, all outdoors, spilling out from the kitchen onto the street. A little confusing at first, but once seated it felt lively, immersive and very in the moment. Each course is delivered explained, and then you’re given time to eat before they return to ask if you’ll be partaking in the next course.
Cash only did have us keeping up our mental math on how many dishes we could afford with our cash on hand, but it was absolutely worth it, and makes the process of payment simple and fast.
If you enjoy being surprised, trying a variety of dishes, and experiencing something that feels truly unique, this place is a must.

Maybe I had a bad draw. I waited an hour after signing up, sat for 6 courses. In the end, I had two mushroom and squash blossom tacos, a pork adobo taco, an al pastor taco, and a pork belly taco. For 1,010 pesos.
I’m sure the ingredients were better, the food had a story, it was elevated in some way. But my Spanish wasnt good enough to understand the explanation, and the waiter’s English wasn’t good enough for me to understand why it was elevated.
So in the end, I had to go by food alone, and the food was a bit repetitive, not all that different in flavor from a sit down taco place, and very expensive.
Again, maybe I got unlucky. But the presentation alone makes me think that their Michelin star is not deserved.

What a special find. Roamimg the beautiful streets of Roma Norte in Mexico City, we stumbled upon this lively spot with all outside seating. The open kitchen fills the interior and loads of busy chefs an happy guests were bustling about. We noticed that it had a Michelin award from 2024 so we decided to give it a try. We asked for a table for 4 and were put on the guest list. We went a few places down to grab a few drinks and take in the sun while we waited. An hour later we were seated at a communal table. Immediatly the waiter started guiding us through the menu, essentially ordering for us, after each round asking if we wanted more. We made it 3 rounds. First we were given a can of Mead made out Avovado Flower Honey, the waiter said this has probiotics and it would be good to begin our meal. It had a subtle sweetness like a light beer. Then they brought the first round of tacos, it was a fermented corn, pinto beans and cheese on a thick corn tortilla, clearly all made from scratch. My fellow diners loved this one, for me, while it was comforting and rustic, I personally needed more salt. Second they brought a spectacular beef, avocado and cotija taco on a thinner corn tortilla…EXCEPTIONAL, out of this world delicious, and the third was a bowl of esquites, corn, mayo, cheese and lime
..a familiar classic Mexican dish but elevated. A truly special meal.

Delicious creative and upscale food, but not overly pricey. Each dish is around 120 pesos. No menu, no prices, and cash only. Get the dessert! We came on a Saturday evening and were seated immediately (two of us), though there was a short line later.
