New Mexican fusion with a French flare. Chef Estevan Garcia has created a menu using traditional Northern New Mexico dishes including Chimayo red chile, chicos, posole, and calabacitas. All produce items are bought locally and are organic. Garcia visits the Santa Fe Farmer’s Market every Saturday morning to hand-pick the freshest and best ingredients. His poultry, beef and lamb are bought locally as well from Shepard’s Lamb in Espanola, NM. Garcia is a true wine connoisseur. His wine list includes red and white wines which are both domestic and imported. Please ask him upon your restaurant visit for the perfect pairing with your meal. Wine is one of his specialities and he’ll be pleased to make your meal a memorable one.

I ordered the Carne Adobada Ravioli, Chicken Paillard, and Flan. Excellent meal. The ravioli was an intriguing blend of Italian and New Mexican flavors, the Paillard the crispiest I’ve even had, and the Flan a study in silkiness.

We ate all over Santa Fe and got rudely turned away at The Shed multiple times. My husband and I agreed that this was our favorite dining experience of our trip.

We ordered cheese enchilladas with added chicken and the chicken paillard with wild rice. They brought the best salsa and chips! This salsa was not too hot, smooth and deliciously flavored. We also ordered the avocado mouse aka guacamole with a pretty presentation. Yummy!

I had a margarita that was well balanced and delicious. This was not the case at some other places.

Enchiladas were so flavorful. The chicken was moist and just melted in with the enchilada. The red chile sauce was rich, flavorful and just enough heat.

We could eat the chicken paillard everyday! Crispy, tangy and comforting.

Dessert: Almond cake was good. My husband ate that. Tres Leches cake with strawberry frosting was divine. Not too sweet, fresh tasting, creamy and a quality pastry overall. This is the best dessert I’ve ever had in Santa Fe!

We will be back. We wish we would have spoken to Chef Estevan as the previous negative reviews of him and the food did not match our experience at all.

Our server was kind, competent and attentive. The hostess was kind too.

We sat in an enclosed balcony and I enjoyed a view of the Plaza Christmas lights!

Absolutely phenomenal. You can tell the passion and craft that the chef has for his heritage and use of local ingredients. The staff was knowledge and so friendly, with excellent wine pairings. If you get a chance to try the fresh goat milk flan, do not pass it up. Incredible!

Food was delicious, service was absolutely great, unfortunately a group of bikers was blasting music right at the entrance during our entire visit. This made it very difficult to have a conversation or enjoy the beautiful rooftop patio.

At 5:30 on a Thursday night we didn’t have reservations, and Estevan had plenty of free tables. The service was excellent. Our waiter stopped by the table to ask whether we needed anything at just the right times. I ordered the poblano chili (with wild rice and summer squash) which was delicious. For dessert we shared a slice of Tres lèche which was a delicious cake layer with strawberry mousse on top.

The Wild Boar special was very good. Sorry, no picture as I dove into my dinner. My wife’s ravioli appetizer was solid and a nice presentation. Recommend wine pairing was excellent.

The enchilada with the red Chimayo chili sauce is wonderful! My favorite of anywhere. Get the egg on top. This spot has become a stop every time we come to Santa Fe.

We stopped here on the night of Lighting the Plaza. Everything was packed but we found 2 seats at the bar. Glorious. Great service, chatted with the owner. Best of all was the lamb shank stew. This is a hidden jem.
