We love the quesadillas, the oysters (only in months that end in Y), the shrimp cocktail, the chimichanga plate is huge and the molcajete!! They have specialty drinks and a good selection of “sloppy” Mexican beers.
Go on…give them a try. You’ll be glad you did!
They offer several different salsas, which I love, but you do need to ask for the varieties beyond the standard one that comes to the table. It’s worth it though.
The staff is always friendly and welcoming, and the prices are very reasonable for the quality and portion sizes. We haven’t had a bad meal yet, and we’ll definitely keep coming back.
The only slight con about the place is the height of chairs at the bar, not the best fit but I still ate very comfortably and definitely not something to reduce a rating by any means.
Our server was really nice — professional, attentive, and made the experience even better. Honestly, I wasn’t expecting such good food and great service from a spot right off the highway. Overall, I’d say it was a pleasant surprise and definitely worth a stop. Highly recommend!

I don’t BS, so if you’re good, you’ll get a good review, if your not, I say nothing and let others comment. But, I have to say I don’t agree with the negative reviews posted for this restaurant. AND, I’m just a customer with no affiliation to the restaurant, we just like good food and don’t like throwing our money away on bad.
We used to go to Mama Letty’s at this same location, until they had a kitchen fire in January of 2025 and closed down. Mama’s was the best Mexican restaurant on the east side of Edmond IMHO…..but alas, Mama’s is no more.
Today we noticed another Mexican restaurant (El Cuervero) was operating at the same location and decided to try it. We live east of I-35 on Danforth so this is very convenient for us and an easy drive there and back, especially if too many cocktails. (LOL)
Well, what a wonderful surprise we found at El Cuervero. The menu has more choices (some very interesting) than Mama’s, yet it still has all the old standbys as well. Lot’s of shrimp, oyster and fish choices besides the traditional dishes.
We tried the Cucarachas (grilled shrimp in the shell) and Campines Botana (deep fried bacon wrapped shrimp and cheese) for appetizers. We had the Chile Relleno and Chimi lunch items and due to the large proportions, we took home part of the appetizers and our lunches…..all should heat up well.
The first thing we consider during the 1st time visit to Mexican restaurant is the complimentary chips, salsa and queso dip…..they were all excellent and my wife is very picky about queso. Chips were warm and the dips were great.
I’ve had the “Cucarachas” at another fairly new restaurant in north Edmond and they were too sloppy and spicey hot (as was their salsa). El Cuervero’s had the same unique flavor, but were not dripping sloppy and were accompanied by a flavorful dipping sauce…..which you could use or not…..I did.
The Campines Botana were something we’ve never had before and were excellent as well. Flash fried or oven roasted bacon and Colby jack wrapped shrimp, were perfect and came with another unique and flavorful dipping sauce made of soy and lime….excellent. (Went back on 12-12-25 and had them again…truly amazing and highly recommended).
Both the Chili Relleno and Chimi lunches were great. Beans and rice were good as well, with a LOT of flavor. Both the shreded beef in the Chimi and the ground beef in the Relleno were tender, tasty and seasoned just right. There are a few restaurants in Edmond where you can hardly chew through the beef….that’s not the case with El Cuervero.
Atmosphere was good and our waiter was polite, attentive and knowledgeable……it was an overall pleasant experience and the food was great. We have our new “go-to” Mexican restaurant and it’s El Cuervero.
Every aspect of the meal was prepared with great ingredients and cooked to perfection!
Also saw a review talking about the food not being “authentic.” Anyone who actually knows Mexican food would realize this place serves way more than just the basic enchilada platter.
