Okay this place is COOL cool.

My husband and I were immediately intrigued by the Vietnamese influence on the menu because that fusion absolutely speaks to both of us. Come to find out, the original concept in Phoenix was actually a pho restaurant called “Pho King” — yes, spelled P-H-O and King. I literally died laughing. In all my years of eating pho, I’ve never heard of a white guy owning a pho spot — but that’s exactly how this started. The owner is married to a Latina, and the menu reflects the foods they love. That evolution turned into Dilla Libre #1, and now there are multiple locations. I love a good glow-up story.

The space itself is packed with lucha libre memorabilia — belts, masks, merch, artwork — it’s everywhere in the best way. It’s playful but not cheesy. Bar vibe, colorful tables, cool energy. Very hang-with-friends, Taco Tuesday, happy-hour type of place.

Now the food.

They have an entire regular menu AND a completely separate vegan menu (including dessert ). Not just one sad option — a whole menu. That always earns points with me.

I had the vegan banh mi tacos and they were delicious. Fresh, flavorful, balanced — nothing over-portioned or sloppy. My husband had a quesadilla and said it was just as good. The cauliflower bites had real spice (not pretend spice), and the habanero salsa actually brought heat. Flavor across the board.

Our waiter talked with us forever about the history and concept — super welcoming, super chill. And when they handed me a free sticker, the employee joked, “It’s free… unless you’re mean to me.” I was sold

Eclectic. Unexpected. Culturally blended in a way that feels authentic to the owners’ story. It’s rare to see Vietnamese and Mexican influences on one menu in a way that makes sense — but this works.

Didn’t try drinks (I don’t drink), but they have solid specials and Taco Tuesday deals if that’s your thing.

Would I go back? Absolutely.
Fun vibe. Good flavor. Cool backstory. And yes… I’m keeping the sticker.

This place makes me want to go back and try the quesadilla. Says they are the champs, quesadilla champs. Thats a bold statement.
.
Ordered the vegan carne asada y papa’s tacos and they tasted pretty legit. Not a vegan by any means but I love the queso out of vegetarian cuisine! Flavor was on point and did not even notice that was real cheese? Was it the salsa? I dont know and I dont care. Thats all I want from a vegan dish.
.
Having said that, also ordered the traditional carne asada fries and they had the flavor and the deliciousness we all love in some asada fries. The vegan asada was better which I normally dont say, but, this time I will say it. If they can say they are the Dilla champs of the world then I can say what I said!
.
Loved it, great staff and great service. Food came out prompt and the salsa was tasty.
.
I heard they do a food truck.. I would definatley drive out of my way to try a few more dishes.
.
Also had the margarita. It was a Margarita. Love them things. No dragon blood or agave margaritas as they did not have those key ingredients. All in all, made no difference as I dont expect everyplace to have every ingredient all the time. Still made to order and staff was super cool about it. Did I say I will be going back?
.
Love the vegan dishes and can only eat so much at once, this time.
.
If you order the elote, order on the cob, felt like that was the better angle for taste but I have only had the cup version here. Next time. Still finished it and would get it again, on the cob.
.
Big thanks and appreciate you being in business. ❤️

5 stars for service and atmosphere. Vegan options were really good but not mind blowing. House chips were incredible and vegan queso was amazing. Loved the agua frescas. Our server, Sylvia, was incredible – super friendly, warm and made our last night in Phoenix memorable! Big props to the entire kitchen staff too.

As vegans who visit Cave Creek annually, this place has been one of our favorites so far. They have a large vegan menu that has variety and both their vegan and non-vegan entrees were excellent. Great value for the food – we left stuffed! We will be back next year!

I am from Tennessee traveling with my friend for my move to California. We stopped here for some delicious Mexican food and it did not disappoint! I couldn’t finish my chupacabra burrito. Big, stuffed, and packed with flavor! The guacamole is also FFFIIIRRREEE! Totally loved my server Estabon too! What a lovely person! 100/100! I want to come back one day!

This place was fantastic! Great quesadillas, tacos, and burritos. They have traditional versions of all their menu items, and vegan options of the same items! Literally, one side of the menu is traditional with the meats, and the other side of the menu is essentially all the same items to order, except they’re all vegan! Food was great, burritos were huge. Expect to spend $15-20 on your meal and a few bucks for a drink, but well worth the money. Staff was super friendly and helpful, checked on us multiple times during our meal. I’ll definitely be eating here again!

The Dilla’s are yum and unique. Definitely a white people tacos type place( no spicy anything) but had to try and it was good. $20 dilla is a bit high but was good and crispy. Cute decor and friendly service. Happy hour looks rad. Maybe that will bring me in again.

I can’t get these quesadillas out of my head. They’re unbelievably delicious. Our kids couldn’t believe the taste that hit their mouth holes, and nor could my wife or I. We will be back. You will, too, when you get here even once. Get ready for impact!
