The seafood Spanish Paella did not disappoint. Food was delicious, savory, fragrant, and appealing. The freshness of the ingredients shined and coming from a Spanish ancestry, y highly recommend this dish. The dessert was exquisite as well. Give this place a try. Ordered the mushroom and octopus appetizer and the Spanish Crème Brûlée. My Asian girlfriend loved every bit of it

Absolutely phenomenal tapas experience. The Chilean sea bass was cooked perfectly—soft, buttery, and full of incredible flavor. The paella was equally impressive; the rice was done just right and not mushy, with beautifully balanced flavors throughout.

The wine list is perfection—thoughtfully curated and paired wonderfully with the menu. But the true standout was dessert. The espresso martini crème brûlée was next level and a must-try.

The owner was fantastic at explaining each item, which made the experience feel personal and elevated. Every dish arrived beautifully presented, and the portion sizes were perfect for tapas, allowing us to try a variety without feeling overwhelmed.

Highly recommend encouraging friends to come here—this place is a gem and absolutely worth the visit

Was in town for the balloon festival with my family. We were able to make a last minute reservation for 7 about an hour before close and they were able to get us in no problem. We were greeted promptly and our server was excellent! She was very knowledgeable with both wine and food options. We had the seafood paella, and most of the hot tapas options. Everything came out quickly and was DELICIOUS! The clams, ceviche, meatballs, scallops, croquettes, seafood paella, all of it were phenomenal! Everything was super fresh, very flavorful and cooked to perfection. We finished off the dinner with the brief cheesecake and the crema catalana and they were the perfect finish to the evening! To top it off, the chef de cuisine came out with the desserts and introduced himself and he brought us out a plate of flan and it ended up being everyone’s favorite! I cannot recommend this place enough, the food, service, and atmosphere were all exactly what you are expecting for a great tapas place! Kudos to everyone on the staff!

I commend Enrique for his transformative work at the Old Cellar, now called Debajo Tapas, including the refreshed name and updated menu.
The paella is exceptionally moist, fresh, and flavorful.
The steak, paired with chimichurri, earns a perfect 10/10. The fish course is not to be missed; the sea bass was wonderfully cooked and nearly melted in the mouth, it earned a solid 15/10 & I am not a fish connoisseur.

The wine selection, curated by the owner for our table, featured a white wine from Spain—Desconcierto—which was light, crisp, and delightful.

The nail in the coffin was the Desserts! The almond flan was exceptional.

Overall, this restaurant has become the new must-visit destination in Albuquerque. The cuisine tells a story of history and craftsmanship. Albuquerque has arrived.

Great tapas restaurant just East of Old Town. Traditional Spanish fare in a friendly environment. The plates are full of flavor and variation. The staff was incredibly friendly and knowledgeable. The wine selection is tremendous as well. Look forward to our next visit.

Exceptional!!!! BRAVO! Every detail was perfect and heartfelt: classy calm intimate atmosphere, the owner and chefs greeted us warmly, and YES, my god THE FOOD! superb, diverse, delicate, rich and creative, all without trying too hard.
