I’ve spent decades eating at the staples in Little Havana and Hialeah, and I’ll be honest: finding that same soul in Colorado is usually impossible. Cuba Cuba in Castle Rock is the exception. I have eaten here numerous times and have worked my way through a good portion of the menu. From the first bite to the last sip of a mojito, the authenticity is staggering. This isn’t a “Colorado-fied” version of Cuban food; it’s the real thing.
The Food & Drink:
Whether it’s the perfectly pressed Sandwich Cubano, the tender Ropa Vieja, or the Lechon Asado that tastes exactly like it came out of a family kitchen in the 305, the flavors are spot on. Even the starters, like the Mariquitas and Croquetas, have the exact texture and seasoning I grew up with. The bar program is equally impressive, with rums and cocktails that aren’t just sugary drinks, but true Caribbean classics.
The Vibe & Service:
What really sets this place apart is the Miami aesthetic. The atmosphere is vibrant and hip without trying too hard, capturing that specific energy you usually only find on Calle Ocho or in Doral.
Today, Trevor took care of me, and I have to give him a huge shoutout. The service here mirrors that welcoming, high-energy hospitality I remember from home. Trevor was attentive, knowledgeable, and made the entire experience seamless.
Bottom Line:
If you’re looking for a lunch or dinner spot that transports you straight back to the islands, this is it. It’s the only place in the area that truly makes me feel like I’m back home. I honestly couldn’t think of a better place to eat.

I went with my go-to, the ropa vieja juicy, tender perfection every single time, paired with their signature rice & beans. Comfort food goals. My hubby locked in on his all-time fave, the media noche sandwich, and let me just say… from the soft flaky bread to that savory filling, he was living for every bite. And of course, no trip here is complete without the legendary mojo fries crispy, zesty, and dangerously addictive. We took it all down with a fresh squeezed cooba lemonade and pina coloada bringing us back to the isla de cuba
