I have purchased drinks and beans here, as well as ordered beans shipped from the roastery. I recently had to go to decaf for medical reasons and that scared the heck out of me as I am a coffee addict/lover/home espresso brewer/etc.
The beans I’ll talk about here are the Mexican Turquesa from the Chiapas region. They are Solar roasted Arabica. Tasting notes of Walnut and Milk Chocolate
I originally had the non decaf medium roast and I loved it for pour over. Drip (mocha master), and it turned out a pretty tasty espresso shot with very little difficulty in dialing in the grind.
Since I have switched to decaf, I have had both the medium and the dark roast. There is barely a hint of difference in pour over and drip on the medium roast.
It’s fantastic that a decaf could date so could. I have been a death before decaf person, until It was a reality. I was very worried I would have to give up coffee as I’ve never heard a good word about decaf.
I then thought to myself, if there is anyone I can think of that could keep flavor and texture intact, it would be Combs. I went up to Corinth and had a pour over in the cafe and I was impressed. I bought a jar then and there.
I had since run out and ordered another 12oz of the medium, and decided to also give the dark roast a try, specifically for my Moka Pot. The Dark roast performed very well in the mokapot. All of the tasting notes were there.
Combs sent me fresh roasted beans. The moment I opened up the UPS envelope, the aroma engulfed me in a warm hug of happiness and comfort.
Again, I was not disappointed, and it has far exceeded expectations.
Comb’s really does decaf justice with their Mountain Water Process method.
Pros: variety of coffees (styles, roast levels, and countries of origin) friendly staff, helpful, great chocolate and teas, renewable and sustainable everything
Cons: challenging to find (in a sort of warehouse with a small door), no commercial espresso machine (they do effectively use an Aeropress)
Full disclosure:
This is a really great little coffee shop shopping really great things, from what I can tell. Ariana was an amazing host/barista with a great personality, and she was more than willing to answer any question I thought of and discuss their offerings whilst making my coffee. I did come in at the tail end of the day, so there were some things they had run out of, but not really an issue, as still plenty of options to choose from.
I opted for an iced mocha , which is a typical staple drink for me at a coffee shop, and it was quite good, just not as bold as I usually prefer my drinks. Now, understanding the process, there are a couple primary reasons for this: first, the coffee is made via aeropress, which makes a fast, smooth, and great but light cup of coffee that would please any coffee lover that likes a less bold brew; and second, they use a natural chocolate/cocoa for flavoring their beverages, which is more subtle than a flavored syrup, but very delightful to the seasoned tastebuds and/or more health conscious. I did thoroughly enjoy the drink though, and I find it priced extremely fairly for the quality and quantity received.
I also grabbed a couple of their house made 80% dark chocolate bars to sample on the way home. I will say that I sampled both the Colombian and the Mexican bars, and the flavor profile is great on both (Colombian a little more bold, Mexican a little more smooth, both creamy mouth feel with good melt) , but I did find myself desiring a little more substance to cost ratio. The melting chocolate bar bites did add that little bit of extra flavor I was looking for in my iced mocha and blended quite well in my mouth.
I picked up quart size mason jar of cold press coffee to try later, so I can’t say anything on that yet; however, I can hypothesize that it will be quite delectable, based on everything I’ve tried so far.
Looking forward to the next time I’m in the area with more time to spare and in need of a coffee fix, so I can try some of their other offerings.
In case you’re wondering and have made it this far…. YES, I highly recommend Combs’ Coffee to anyone who loves coffee or tea, as they have great smelling tea offerings on hand, too!
