I ordered a latte, and it came exactly the way a latte should—balanced, smooth, not overly sweet, but not bitter either. You could tell the espresso had been pulled with care, and the milk was properly steamed: microfoam, not froth. It was the kind of latte you sip slowly, partly because it’s hot, but mostly because you want to make it last.
And then the sourdough coffee cake—wow. That’s not a word I use lightly when it comes to baked goods. You expect a certain tang with sourdough, but this one leaned into it perfectly without being overpowering. The texture was spot-on—moist, not crumbly, and just the right amount of sweetness to pair with the richness of the latte.
Collage Coffee isn’t just another coffee shop. It’s a place with a pulse. Warm. Inviting. And worth coming back to. I’ll be back!

The staff is so friendly and the owners of the cafe are 10/10 humans. They also have some yummy hand-crafted pastries and kombucha if that’s your cup of tea.
It’s rare to find a specialty shop that feels like the community it’s in while also serving delicious modern coffee. Collage is doing it so well.
I got a Gouda morning sandwich, house coffee, black, and a strawberry blonde latte.
The latte was very good. Not overly sweet like some places make the flavored lattes nowadays.
The coffee was divine. I sure wish I had found out what it was before I drove away.

My dogs were in the car so I couldn’t stay long, which was a bummer as I’d like to’ve had time to see all the artworks.
