Cobo has the best sushi in Boone — hands down. We went for a date night and loved every minute of it. From the sparkling peach sake to the Appalachian Roll and Yosef Roll, everything was absolutely phenomenal and so fresh.
We made reservations and were seated right away, which made the experience even smoother. Parking can be a little tricky since it’s downtown Boone, but there are several public lots nearby that make it manageable.
Overall, such a great experience. We’re already looking forward to our next visit!

Came here to check out what boone has to offer. First of all, the food here us decent, Id give it a 3.5 but 3 since thats the ratings I can only go for. It was a busy night and food took awhile to get by, prob 30-45 mins wait. Sushi was creative but inconsistent for some reason a few pieces tasted better off from the same sushi roll than the rest. Same for the others. Duck wings were great which exceeded my expectations honestly. Kbbq Tacos sucked but as a foodie I still ate it, just that I had way better and the combination wasnt it. The pork belly was tough, kimchi just didnt mix as well as the seaweed salad. Sounds a bit harsh but Im coming from a point of having had sushi from different places such as ny cali fl etc. For Boone, its good enough. Also, if you dont see asians eating at a supposedly asian restaurant especially sushi, you should keep the expectations low. Nothing of hate, its decent food, just not a “must have” if Im ever in the area.

CoBo is by far the best sushi I’ve ever had. The dumplings were amazing and so was the sushi roll our awesome bartender recommended – the green dragon roll. My husband and I loved it so much we want to plan another trip to Boone just to eat at CoBo.

We took a shot here with no reservations on. Saturday evening. I would generally recommend reservations here, but thankfully we were able to be seated straight away without so much as a wait!
There is a beautiful bar area, and though we decided to sit at a high top adjacent to the bar, I’d choose to sit at the bar if possible next time to watch the bartender or the chefs.
Our server was excellent. She struck the perfect balance between providing excellent attention without overwhelming us. She quickly took our drink orders, while we spent a bit more time looking over the menu. We got two cocktails to start along with the edamame. The blackberry mojito was good, but the Ichigo Fizz was exceptional! I’ll defin try more of their sake cocktails next time!
For dinner, we ordered three rolls to share. We enjoyed a mix of types of rolls, and while we each had our personal preferences, we found them all to be well prepared, with fresh ingredients and careful presentation.
Overall, an excellent meal in a well-appointed establishment!

Absolutely PHENOMENAL place!!! We aren’t locals so we didn’t know that reservations are best, but we ended up getting extremely lucky with 2 seats at the bar right behind the hostess stand and they were perfect! Dustin was our server and he was so personable, so chill and so incredibly nice! The hostess had the best personality and outlook on situations (I wish we would have gotten her name, we were there on 1/16/26 a couple hours before closing)! The food was to die for, so incredibly fresh and flavorful! We got the Red Dragon and the Burning Man (we will 200% always make this a priority when we come visit)!

One of best sushi spots I’ve been to ambiance was great! Service was wonderful Mason is great at what he does! The duck wings and korean bbq tacos were phenomenal! Food was so good I had to return the next day since I was only in town for a short period of time. It was just as great with Jada making sure everything was perfect! Would definitely recommend to everyone all of the rolls are the bomb!
