The food was absolutely delicious. My only suggestion would be to dial back the spice level on the glaze for the anticucho. We enjoy spicy food, but this one was a bit too intense and almost hard to eat. That said, the potatoes that come with it are sublime.
The tacos al pastor were incredible, the ceviche was fresh and delicious, and the papa rellena never disappoints.
All of this paired with the best view in Denver. It is hard to beat.
We enjoyed the bass with yucca and noodles saltado. The skewers were good portion sizes but weren’t a standout item. Though the side of local bi-color sweet corn on the steak skewers was surprisingly delicious.
Warning: the shrimp tacos are extremely spicy and it wasn’t clear on the menu or by the staff.
The menu features everything from Peruvian-inspired sushi and sashimi to Colombian arepas and Mexican tacos, with several dishes drawing from Nikkei culinary traditions. The flavors are bright, balanced, and intentional, and the execution is consistent.
The ceviches, sushi, and street-food inspired dishes all stand out, and the cocktails are crafted with the same attention to detail. The atmosphere — a rooftop with sweeping mountain views — elevates the entire dining experience.

Cimera made our last night in Denver absolutely unforgettable. From start to finish, we were treated to an incredible fine-dining experience that truly exceeded all expectations. Manager Brian went above and beyond to ensure everything was perfect, and his professionalism and warmth set the tone for the entire evening.
Every dish was absolutely incredible—beautifully prepared, full of flavor, and thoughtfully presented. You can truly taste the care and skill that the chef puts into each plate. The bartenders, James and Pat, were phenomenal, crafting amazing drinks and creating such a welcoming and enjoyable atmosphere.
James especially made our final night in Denver so memorable. His attentiveness, personality, and genuine passion for what he does truly elevated our experience and made us feel celebrated and cared for.
We are beyond thankful to Brian and the entire Cimera team for their hard work, dedication, and exceptional hospitality. This was the perfect way to end our trip, and we cannot wait to return. Highly recommend!
