Chez Thuy Vietnamese Restaurant – Exceptional Flavors
I ordered the Bun Hue Chay (spicy lemongrass rice noodle soup) with tofu, and it was phenomenal. The flavor was robust and complex – exactly what you want from authentic Vietnamese cuisine.
On a cold day, this soup warmed me from the inside out. The lemongrass and spice balance was spot-on, and the tofu was a perfect complement to the rich broth. This is the kind of dish that reminds you why Vietnamese food has such a devoted following.
If you’re looking for genuine Vietnamese flavors executed well, Chez Thuy delivers. Highly recommend.

Authentic Thai and Vietnamese food that is absolutely delicious. Plus it’s family run which means there is a constant eye on detail and quality. This place has been around in Boulder for over 30 years so it has listed the test of time and is a bowler classic. Highly recommend!

This is a go to family restaurant for us. They are the best Vietnamese restaurant I have been to in the area. Their Pho is made traditionally, which is likely why it is so much better than any other restaurant I’ve been to. They are great with families and kids, and have options for gluten-free folks as well. They are super friendly and great supporters of the community.

How funny reading all these ugly reviews critiquing the service. In all my years of eating asian food, the best I have eaten comes from the seemingly most rude of servers. It must be a cultural thing or something.
Anyways, the food here was strongly recommended and lived up to and even exceeded expectations. Also, I had great service anyways.
I will definitely come back and I wouldn’t even be bothered by bad service, because the food is so worth it.

Service was a bit “cold” and not friendly, atmosphere is nice and comfortable and the food was average. The serving portions were fair sized. The appetizer veggie dumplings were good, the spring rolls were “okay”, and my Pho broth had very little flavor and not much meat for the price.

Really good food, lots of options including hot-pot and ordering was fast. I would skip the cocktails, go for a beer or sake instead. The medium size Pho is huge and very tasty- all the portion sizes are large which is great. The servers were very nice, the new trainee did get distracted for quite a while talking to a table but overall service was quick and friendly. Plenty of parking. Get the Vietnamese coffee, it’s very good.

Delicious food, but the server didn’t seem friendly at all. She walked away half way threw taking our drink and appetizers’ order. Then, whe she finally came back, we ordered more and she gave some attitude like why didn’t we order everything the first time she was at our table. The drinks were OK and the atmosphere was quiet. Not much parking from what I could see, there might be more behind the building.

The food is super bland. I ordered the Veggie Pho and it tasted like water, no amount of lime, basil, or hoisin sauce could fix it. Customer service was horrible, there was a younger guy who worked there who was extremely sweet. I would not go here if you like flavor. Anti-Flavor here!

This place isn’t as bad but not as great. Good place to come try once. First, customer service is short staff so be ready to order quick. Cup rims does not look clean so ask for a straw or bring your own straw. We ordered pho combination, was unable to order medium, waitress was quick to say they only have large. We also ordered the fried quail and the spicy oxtail soup. Quail bird was the best dish but threw me off a bit still seeing feathers on the bird. The spicy oxtail broth looked good but the flavors was too sweet and not a great combination with ox tail, which wasn’t that tender. Our pho combination broth tasted good but I think the chef was being a little too lazy and not cutting the tendons. There was also a ball of frozen rare meat that couldn’t get cooked well in the broth. Presentation.. of the quail dish gave a silly look. Anyways, I vote this is NOT the best Vietnamese restaurant but good to try ONCE.
