While downtown Nashville we went into the Assembly Food Hall (North Hall) to check out some of the various choices. We made the best choice by stopping in the CHEESE LAB! We had literally the best bagel breakfast sandwich “Good Morning Smashville” and the most yummy Jumbo Cheetos Ball ‘Boudin Ball’ rolled in hot Cheetos, and filled with lab sauce, beef, and rice! Out of this world!

We came to visit Nashville with friends and ended up eating at Cheese Lab at Assembly Food Hall, and it was one of the highlights of our trip. We ordered a ton of food and honestly loved every single bite. We tried different grilled cheeses including the American classic, smashburger grilled cheese, birria on Broadway grilled cheese, and the brie and fig grilled cheese. We also got a couple of salads, the market salad and the strawberry field salad, which were fresh and delicious.
We tried the boudin balls in three flavors: chicken, beef, and mac & cheese, and they were all amazing. To finish, we got the Dubai chocolate strawberry cups and the Dubai chocolate cheesecakes, which were absolutely incredible. Everything was heavenly and far exceeded our expectations. The service was very fast, welcoming, and professional. We would definitely come back and highly recommend it.

I went to Cheese Lab in downtown Nashville and tried the BBQ Brisket Mac n’ Cheese — it was amazing! The flavor was rich, creamy, and perfectly balanced with the smoky brisket. If you’re in Nashville, you have to try this place. Totally worth it!

Today i had the idea of eating outside, and just stumbled on Cheese Lab, and i can say that i didn’t regret spend my money there. The food is fresh and appetizing and the people working there were so friendly.

The whole assembly food hall is really a nice place to eat or chill. But the cheese lab was my favorite!! Great melty grilled cheese w/tater tots highly recommend!! That and a coors lite…LIFE IS GOOD!

I was there with some friends this Saturday. Everyone had a different sandwich to be able to try different things from the menu. The Brie and fig was original and the brisket sandwich was really as well but for me the best was the pimento cheese with Mac n cheese sandwich, it’s definitely my favorite and the pimento cheese and the Mac combo match really well it’s a 10/10 for this melt. Overall great experience, the service was quick and their gluten free options allowed my friend who has celiac to eat with us. I also wan to mention that they have vegan and vegetarian options, a very complete menu.

Amazing experience in the heart of Nashville near broadway, true food was amazing and the prices reasonable for the location and food quality. I personally got a grilled cheese with some tomato soup, and it didn’t disappoint, an authentic grilled cheese with a creamy tomato soup. A must try if you’re around Nashville

They had 1 job and failed. Gave me a sandwich with only 50% covered in cheese, and it’s not even melted. Bread is soggy and gross. Waste of money!
