The meat was flavorful and cooked perfect on everything. It also was not a skimpy amount of meat but large portions in each thing. Everything for the way the beans were seasoned the fresh flour tortillas and guacamole was excellent.
The service is slower but not unreasonable for how popular/busy it was. Our waters were always full and the waiters were very professional and friendly.
The atmosphere is very well decorated and despite being a busy room it was not overly loud.
I would highly recommend going here!
From the moment you arrive, the staff sets the tone with genuine warmth and professionalism. The cocktail menu alone is reason to go back: the key lime pie martini and cucumber margarita were exceptionally fresh, well-balanced, and memorable. For starters, the chips and salsa were far from ordinary – thick, crunchy chips paired with four distinct salsas, each packed with flavor. The entrees, the red beef and chicken mole enchiladas were rich, comforting, and deeply flavorful, while the rib eye tacos stood out for its tenderness and bold seasoning.
A special mention goes to our server, JoJo, who was attentive, friendly, and made sure everything flowed seamlessly throughout the meal. Casa Chloe is a lively, flavorful dining spot that delivers excellent food, standout drinks, and exceptional service.
Danielle and Joseph were exceptional. They were welcoming, attentive, and incredibly knowledgeable not just about the menu, but about the cultural background and history behind the dishes. You could tell they genuinely care about the experience they are creating for their guests, and they made us feel comfortable and excited to try everything.
Chef Holden Carpenter delivered something truly special. The food was easily the most authentic Mexican cuisine we have ever had. Every dish felt intentional, well researched, and respectful to Mexican culture and tradition. You can tell there is a deep level of understanding and passion behind the food being served, and that really stood out to us.
I do not say this lightly, but Casa Chloe and Chef Holden are operating at a level that deserves Michelin recognition. The quality, authenticity, service, and overall experience were outstanding. Fredericksburg is extremely lucky to have a restaurant like this.
We will absolutely be returning and recommending Casa Chloe to anyone visiting the area.
First of all, this restaurant is walking distance from Main St in Fredericksburg, so enjoy the beautiful town view and walk to this place! They have indoor and outdoor seating, the weather was perfect so we got a table outside. They have one bar inside and another outside and they are known for being a Mezcal & Tequila experts, so if you love these two this is your spot!
You must order the “Queso Flameado” , if you are not familiar with this term, queso flameado is Queso Oaxaca a very popular type of cheese in Mexico, it’s in an iron skillet and it melts, it always has a topping, they have here ground beef and Serrano peppers, and they bring you small crispy corn Tortillas and you make taquitos! Be prepared for a delicious surprise!
Our main dish was the Ribeye Tacos and the come served with a side of bone marrow… OMG!! If you get this dish, remember to scrap the bone marrows from the bone and add it to your tacos, game changer!!
Their drinks are excellent and service is wonderful.
Definitely a Must in Fredericksburg!
