Absolutely a must have coffee if you’re in Knoxville, Tennessee. The concept with the capybaras is amazing, very unique vibe and cool decor inside. The coffee shop itself was immaculate, and friendly staff. The maple iced latte had good flavor and aroma. Don’t worry, be capy.

A cozy coffee shop. The coffee was delicious, with the cutest art on top served in a very quality mug. The baristas were very friendly. I love the seasonal menu as it add variety and festiveness. The only critique I would have is improving the food options. Great experience.

The best coffee shop in Knoxville. To counter a previous poor review, the owners are in fact Brazilian. No cultural appropriation happening here. The coffee is high-quality, sourced from Brazil, and always consistent. The barista’s go through an extensive training process to be the best at what they do. 10/10 experiences experience.

Their coffee isn’t the only thing that’s great, they have an amazing selection of teas. I have yet to try one I didn’t like! The staff and owners are always wonderful and friendly. It’s the perfect place to study or meet with friends. Just try it. You won’t regret it!

Capybara is in a great location near campus and a nice spot to meet or study.

However, the staff is extremely rigid about orders and doesn’t allow customization. I like espresso with just a few ounces of milk and often order iced cortados at other coffee shops, but was told they could only make it hot and they wouldn’t accommodate me to get my desired drink. Another time, I ordered a V60 with a light roast and was told I had to either get a medium roast or switch to a Chemex, which was more expensive. My friend wanted honey in her cappuccino, and they wouldn’t allow that either. Another friend ordered a spiced apple cider chai with whole milk but was told she had to get oat milk instead.

They also told my friend she couldn’t sit and work before ordering, which added to the unwelcoming vibe.

I understand they have preferences for how their drinks should be made, but reasonable customizations should be allowed. It would go a long way if they offered alternatives or worked with customers instead of flatly refusing requests.

My new favorite coffee shop in Knoxville. The lavender latte is wonderful and I also love the morning glory muffin! On a nice day, it’s nice to bring my laptop and work at one of the outside tables.
