

In 1950, with a $500 loan from his father, Bill Miller opened a small poultry and egg business. Three years later Bill Miller Bar-B-Q began as a small fried chicken-to-go restaurant. Today Bill Miller is a family owned and operated business with 77 locations in the San Antonio, Austin, Corpus Christi and surrounding areas. We take pride in cooking all our barbecued meats in pits smoked with 100% live oak wood. We offer a variety of meats such as brisket, sausage, bar-b-q chicken, pork spareribs, turkey and fried chicken. We specialize in the baking of breads and pies made fresh daily. I should have driven back for a refund.
I should have trusted the low Google rating and walked away. Unfortunately, I gave this Bill Miller’s a chance, and it was a mistake.
When I arrived, I stood patiently behind a couple who were actively ordering. As soon as they finished, a young, tall, heavier-set male employee looked directly at me and then walked away without a word. No greeting. No acknowledgment. Nothing.
A young lady at the register then asked what I wanted to drink. I gave my order. After that, we stood there staring at each other for over five minutes with no food being served and no other employee in sight. Another customer eventually walked up, and the two of us stood there together, looking at an empty service line with no explanation.
This was around 2:00 PM. The restaurant was not busy.
After several more minutes, the same register employee finally came back to take our food orders, showing no urgency and no awareness of how poorly this was being handled.
This location was a complete breakdown of basic customer service. No leadership. No accountability. No effort. It was especially disappointing because my past experiences at Bill Miller’s have generally been positive.
This team needs immediate training on customer acknowledgment, urgency, and professionalism. Until that happens, this location does not deserve customers’ time or money.
Do yourself a favor and skip this one.
