In 1950, with a $500 loan from his father, Bill Miller opened a small poultry and egg business. Three years later Bill Miller Bar-B-Q began as a small fried chicken-to-go restaurant. Today Bill Miller is a family owned and operated business with 77 locations in the San Antonio, Austin, Corpus Christi and surrounding areas. We take pride in cooking all our barbecued meats in pits smoked with 100% live oak wood. We offer a variety of meats such as brisket, sausage, bar-b-q chicken, pork spareribs, turkey and fried chicken. We specialize in the baking of breads and pies made fresh daily. The Bill Miller’s on West Commerce and Zarzamora is always a toss up, sometimes the food is good and sometimes it’s not. Lately it’s not, the brisket is always dry and has the consistency of beef jerky. It doesn’t matter what you order it can be a plate or a poorboy. My seasonal favorite, the soup has also been a let down because they cannot seem to be consistent one day it’s all broth, the next you get a little veggies but no meat, the next if you lucky some meat but no veggies. Don’t get me started on the crackers, I mean is there a cracker shortage we don’t know about I’m lucky if I get 1 pack and the crackers are always broken and look old. Do we need to get the Keebler elves to make some more crackers and deliver them to Bill Miller’s.

By far one of the worst Bill Miller’s locations. I moved into the neighborhood a few months ago, and every time I’ve ordered from this location there’s been an issue. The food is often burnt, or they forget items we asked for. I really wanted to like this place, but the consistency just isn’t there.

Wed Oct.22, 2025, around 8 PM….bad managment on duty!!! .Waited 15 mins for a doordash order, asked the manager what is going on with order, why is it taking so long, mngr. informed me that I can unassign myself from the order if I want too. This is bad customer service, and I must say pretty rare at Bill Millers. I wasted my time and gas. An attitude that a doordasher is somehow a 2nd class customer needs to stop now!!! This is how it starts, and it ends like what happened to the Sonic location down the street.

Got fried chicken it was hot and good, but it also took 35 mins to get the chicken. Was disappointed in the fries.Half the bar was taking away with very little ice. (How long was my food in the temperature danger zone) When asked for refills, they told us they had none left but had buckets of teas on the counter.

While I was on my way to work, I stopped at Bill Miller’s located at 2823 W Commerce St. Even at 5:05 P.M. I was able to place my order and drive off in about 10 minutes. That’s not bad for the number of people inside. My oder was repeated back to me, I had my drink, and I received my order with time to spare to get to work. The location was clean, the bar was stocked, and the staff was communicating well with each other. I’ll definitely return.
