The wine pairing was enjoyable, though I would have loved to hear a bit more about each pour—where it came from and why it was chosen for that specific course. We’ve had a similar experience at Potong and appreciated that extra context. The service overall was good but not exceptional; our waiter was polite but could have been a little more attentive given the format and price point.
As for the food: the oysters were fine, but the tomato granita didn’t add much flavor and couldn’t compete with places like Commission Row or Geraldine’s. The salads were fresh and nicely plated, but not particularly memorable. The standout by far was the Wagyu coulette steak—cooked perfectly, rich, and full of flavor with every bite. It’s one of the best steaks I’ve had in a long time.
We both finished with the brown butter salted caramel praline ice cream, which was phenomenal—sweet, salty, and buttery in all the right ways.
Overall, Beholder delivers an excellent dining experience, especially if you sit at the chef’s counter and enjoy the craft of cooking up close. A few tweaks in service and a touch more flavor in the early courses would have made it a perfect five-star night.
The only things we liked were the French fries, which were very good (the only redeeming feature of the food), and a mezcal drink.
The service was very slow, and our waitress was not nice, at times, I even thought she was annoyed. I wouldn’t recommend this restaurant

Will, our server, was both knowledgeable and engaging. He was resourceful to ensure that our meal was gluten free. We enjoyed the tasting menu with the wine paring. If you have an elevated palate and enjoy fantastic ambiance, I’d encourage you to make a reservation!
We decided to add the apple crumble skillet on top of our already perfect meal, and this was the highlight of the night. The Gouda and the whipped sour cream had me drooling and still reminiscing about the meal the next day.
