Oh my LAWD get here the very second they open. The coin margarita is outrageously good. Ask for Tracey, who we met at Lot One and is our top favorite. The owner, Josh, was on hand for this soft opening and everything was knocked out out of the park. I had the pescada special and hubby had the steak fajitas. We argued about who won. We split the tiramisu, which was absolutely incredible. The table next to us sat the electrician who did the work for the restaurant and it is absolutely beautiful. We also met “Gus“ from Ralston Valley, where one of our children attended to high school. This was the epitome of family and neighborhood vibe. Josh’s wife provided inspiration for the decor and as you can see from the photos she absolutely crushed it. Thank you for accommodating my service dog by giving us a half booth and making the experience comfortable, enjoyable, and an experience. You definitely want to have on repeat.

Agave Blue was absolutely fantastic. The food was absolutely exceptional and the drinks were the best in town. The owners work here everyday and they put their heart and soul into this business. They handmade the guacamole right in front of you and it was exceptional. The ahi tuna ceviche was the best civeche I’ve ever had. This is my new favorite restaurant and I will be come back for more. Authentic food from an award winning chef (who is also the owner) – you can’t go wrong!

Agave Blue is such a great edition to our community. We loved our first meal tonight. The presentation was absolutely amazing and tasted amazing as well. I’m very particular about the quality and presentation and tonight, Agave Blue definitely checked off all the boxes.

Agave Blue delivers such a vibrant and refreshing dining experience. The chicken fajita tacos were juicy, well-seasoned, and perfectly balanced. The guacamole with pomegranate and mango was a standout — creamy, bright, and layered with just the right touch of sweetness. The ceviche was impeccably fresh with a clean citrus finish that made every bite feel light yet satisfying.
