Went for ribs ..out of ribs. That was a bummer but the rest of the food we were able to order was good. I really liked the sausage, pulled pork, and the wings. I want to get back to try the ribs but I’m not sure when they do and don’t have them. They were out of tonic so no gin and tonic, and great red wine choices. Keep working on it Silverback and we’ll be back.

This is perhaps the best BBQ I’ve ever eaten. Oftentimes I find *some* thing I’d change about a place but not here. From the server who greeted us to the owner who was packing a ginormous catering order to whomever skillfully smoked the meats everything was top notch. This is an unassuming spot from the outside and completely unpretentious inside. They’ve focused all their energy in great food! St Louis ribs were fall off the bone, tender lightly smoked and coated with a sweet sticky glaze. Pulled pork, too is nicely smoked with a bit of tooth to is so it’s not mushy like it can be some places, not overly laced with fat or connective tissue either. Brisket, what can I say… again near smoked perfection! The absolute best thing here is the Mac & cheese! This is literally the best I’ve ever had. I do this pretty well myself but this is better than my own! If I was ever to do a BBQ spot, I’d do it exactly like this. If I could give it more stars I really would.

You know you’re in a smokehouse the moment you walk in. The excellent smell leads you right to the counter to order. The food was good – smoked meats are better than the burger, but I guess that should be expected. Burnt ends had excellent flavor and overall the meat was tender and flavorful. Looking forward to going back to try the brisket and nachos.

I realize that everyone has their own interpretation of what is considered good BBQ. This was not, no matter what language you speak.
The pork belly sandwich was barely edible – I wasn’t expecting a lukewarm, wet piece of belly- did this thing even hit the grill? Since the meat didn’t have any noticable flavor, it might have picked up some caramelization with some reasonable attention to heating method.
Also: if you don’t have veggies that are at peak flavor, don’t serve them. Pretty sure that the tomato on my sandwich was so underripe it had tinges of green.
My partner had the Silverback Burger, thank goodness she was willing to share. The burger was 7/10, so they’ve got that going for them.

As soon as you walk in, you’re instantly hit with the great smell of BBQ. My dad and I went here for dinner. It was my first time going but his 7th time. There were a lot of great options, but I got the brisket sandwich, with potato wedges as my side and my dad got ribs with beans and cornbread. The taste of the brisket, with their homemade sauce, was something I have never tasted before. It wasn’t too overwhelming, yet it had a lot of great flavor. I tried the ribs and, when I tell you, they just fell of the bone. Yes the prices may be high, but you’re definitely getting what you pay for. The staff was amazing, the atmosphere was comfortable and welcoming, and the food was simply, our-of-this-world. Definitely recommend. Now time to bring my mom!

My husband, kids and I love the smoked meats and side dishes they serve here. Just right as you walk in the door…you know you’ll be leaving with your tummy full. It’s our number one stop here in Owatonna. Smoked meats and homemade BBQ. It’s mouthing watering, finger licking good

Great service, very accommodating. The ribs were awesome, and the Fire sauce is really good. It’s actually quite spicy with great flavor. My wife had brisket loaded baked potato and that was awesome too! Fair prices. We will be back!

Have been here twice hoping the second experience would be better than the first. Unfortunately, not the case. Both times, not all meat choices available and it was before 5:30. First time brisket was dry without a lot of flavor. Pulled pork was OK, nothing great. Hubby said ribs were good. Second time was with a larger group and the wheels fell off. No ribs available at 5:25 on a Friday. Poor planning! Waitress couldn’t get order straight, had to come back several times before she finally had it right. Took 40 minutes to get food. Chicken sandwich so dry had to mix the chicken in with the beans (which are really good!) to get it down. Everyone at the table said their food was OK at best- outside of the beans. So want to support local restaurants, but we’re done trying here.

Outstanding food at a nice price that left me full after the ‘appetizer’ brisket Nachos! The sauce was terrific as well as the brisket. Good place to get your BBQ fix

When I first heard about this place opening in Owatonna I was really excited. Upon them posting the menu I was still excited although the prices on the sandwiches seemed a little high but original post said it came with a side so $12 for a sandwich and a side seemed fair.

Went in around 7:30pm on a Saturday. There were two other groups there otherwise the place was quiet. I ordered the brisket sandwich and beans and a side of potato salad. While waiting I noticed the floor was absolutely filthy. There was even a dirty water line leading out from the kitchen all the way to the front door that was sticky.

While waiting another family went up and complained about their order. Sounded like they had cold food and it wasn’t very good. I decided I would still approach with a fresh perspective and not let that ruin it.

On the drive home my total kept bugging me and when I checked my receipt I was surprised to learn that I had been charged for two sides when online stated one side came with my sandwich.

I called and asked and was told I was wrong. I went on their Facebook the the spot marked menu and sure enough it said side with sandwhich. After commenting online they took it down and replaced it. I was pretty disappointed with the amount of meat on my sandwhich for $12. It felt like the double quarter pounder at McDonald’s was a better deal.

The sandwhich it self was luke warm when I got home as were the beans. The potato salad was still cold thank god

I’m not sure if I would attempt to go back yet. I’m pretty disappointed with the potion size for $12. The sides for $3 a piece I felt were fair.
