My wife and I recently enjoyed a truly exceptional dining experience at Verde Bistro. We had a 6:00 PM reservation, and we were immediately seated in the serene and quiet dining room—a perfect start to our evening.
Our meal began with cocktails, and the bartender’s skill was immediately apparent. My Aviation was perfectly crafted, as was my wife’s cocktail. They were the kind of drinks that show a bartender who takes pride in their work.
For our tapas, we started with the Mejillones al Ajillo. They were presented beautifully and prepared expertly, served in a delicious white wine garlic sauce, not the red wine sauce listed on the menu. This is a dish that is nearly impossible to find in the San Antonio to New Braunfels area, which is so saturated with Tex-Mex.
Next, we had the Baked Brie Puffs, which were beyond delicious. Served with a smoky raspberry-chipotle sauce, they were a flavor explosion. We found that two puffs are quite generous and could easily be shared by a group of four, especially if you plan on trying multiple tapas.
We followed with the Gambas al Ajillo and the new Matador Shrimp. Both were outstanding, but the Matador Shrimp was a real standout. The manager, Chris, stopped by our table to get our feedback on this new menu item, and we were more than happy to rave about it. We truly hope it becomes a permanent fixture.
While we were a little disappointed that the Paella is only available on select Thursdays, Chris was happy to take our contact information so he could let us know when it’s being served. This kind of personal touch makes a huge difference.
Our evening at Verde Bistro was absolutely delectable and an experience we won’t soon forget. It’s now at the top of our list for future date nights, and we can’t wait to go back and try more of their tapas.
This place feels like a Phoenix rising from the ashes—renewed, refreshed, and reborn into a beautiful little gem right here in Bulverde. An absolute must-visit.
The atmosphere is welcoming for families, dates, or just to hang out with friends. My child was temperamental and they were so accommodating, kind, and trying to help. The food came out at a reasonable time. The restaurant was clean with cute fall decor. The waitress was so sweet and attentive. Even the bartender who didn’t even serve us checked up on us.
We got the verdura pizza, meatballs, Brie, and Brussels sprouts. I think my favorite was the meatballs. We will be back when we come back to San Antonio to visit. Definitely worth checking out.
Our server, Steph, radiated joy — her energy was contagious, and you couldn’t help but smile. Oscar and Chris were also incredibly attentive and genuinely interested in guest feedback, which added a personal touch to the experience.
Now, let’s talk about the food and drinks — absolutely phenomenal! We shared the Poblano Soup, Blistered Shishito Peppers, Panela Cheese, and our personal favorite, the Ahi Tuna Crisps. Each dish was beautifully presented and bursting with flavor.
For drinks, we tried the Hibiscus Mint, Lavender Lemon Drop, and the Paloma Sour — every cocktail was thoughtfully crafted and paired perfectly with our meal.
We’ve already decided: Verde Bistro is officially a must-visit every time we’re in town. Highly recommend!
