I’d been warned by my casino host and a few influencers not to get my hopes up, but I wanted to give it a shot. As a lifelong José Andrés fan, I came in expecting brilliance. The ambiance was buzzing, the décor stunning… but the overall experience felt like dining on the set of Demolition Man—that Taco Bell fine-dining scene.
When I was seated, a huge smoke cloud rolled through from a table-side steak. It happened twice that night, and the lack of ventilation made it miserable. My table of five spent half the meal coughing through “forest-fire chic.” Even Korean BBQ joints manage better airflow.
The food started promising with the caviar cone—clean, balanced, and delicious—but quickly went downhill. The famous A5 “Philly Cheesesteak” looked futuristic but tasted like cheesesteak-flavored air trapped in a croissant shell. The “Lucia” Caesar Salad (Caesar-flavored sorbet bites) and “Not Your Everyday Caprese” were equally gimmicky—more form than flavor.
The Croquetas de Pollo were decent but nothing special—Trader Joe’s could rival them. The steaks (Black Angus ribeye and bone-in strip loin) were solid 8/10, but in Vegas, that’s average. At this price point, I expected perfection.
Credit where due: the Buttered Potato Purée was absolute magic, and the Patatas Bravas were crisp, golden perfection. Those two dishes were the only redeeming highlights.
Total damage: $850 for three cocktails and dinner. Worth the story, sure—but not the food or experience. You can do better. Everywhere.
