The owners, Alessandro Casali and Giangiacomo Greco, hail from Italy, and they have brought authentic and delectable dishes from the Old World.
From my travels in Italy, I noticed that the pasta dishes are not too heavy and not over-sauced – Fusillo brings this same focus on ingredient integrity and simplicity to DTSP.
This does not mean that the dishes are simple. During their grand opening, I thoroughly enjoyed the carbonara mezze maniche and the pesto Fusillo. I added burrata to the carbonara and shrimp to the pesto. The pasta was cooked perfectly al dente and not mushy. The carbonara was authentic Italian prepared with guanciale (not bacon, which is a sin) and the burrata added a comforting creamy element. Most carbonaras are so rich and heavy that they put you to sleep, this was not the case at Fusillo.
The pesto sauce was bright and herby, which hit the spot.
The portions are substantial and the prices are extremely fair.
Don’t let the fast-casual moniker fool you, the pasta dishes are superior to some fine dining restaurants in St. Petersburg at a fraction of the price.

I tried the Pomodorini & Burrata, the Cacio e Pepe, and the Amatriciana (which was my favorite). Everything was really flavorful and tasted fresh, and I like that the menu keeps it simple and focused.
Overall, it’s a great place if you want good Italian pasta without a long wait. Perfect for a quick bite on Central Ave.
